Megan's Granola

YUM!!!!!!!!!!!! This is SOOOOOO good!!! The only thing I did different was omit the maple syrup (didn't have any...just added more honey instead) and I'll do it the same way next time. I baked it for 30 minutes, which was perfect for me because I LOVE crisp/toasted granola. Next time I will add the raisins right away and clump the granola into clusters which I prefer over loose granola. Excellent recipe though. Thank you!!

Edamame Dip (Edamole)

this was really different but great! we loved it and honestly it didn't taste the same, but was very similar to a good guacamole. we will definitely make this again. next time i will probably use some chipotle powder though instead of buying a whole can of peppers for just one pepper.

All-Around Good Smoothie

While I must forefront with saying that I did not have any protein powder to use, so I went without, I followed the rest of the recipe exactly. I did not think it was too great. There is another smoothie recipe on this site that I like much more. I thought the flavor was quite bland and it was not thick (although that could be due to the missing protein powder...I did end up adding some oatmeal at the end to compensate for that).

Homesteader Cornbread

This was the perfect combination of sweet and savory for me! There are only two of us, so I made the whole recipe, but split it into two 8x8 pans instead of a 9x13 so I could pop one in the freezer for another time. I cooked them for about 23 minutes and they were perfectly moist. Definitely a keeper recipe!

Strawberry Oatmeal Breakfast Smoothie

Officially addicted to this!!! The only things I do different: I use honey instead of sugar and regular milk instead of soy (don't usually have soy). I did try it with pineapple juice once and did not care for it at all. Personally, I think it needs the creaminess of the milk/soy. Although doing half frozen strawberry and half frozen pineapple is divine!!! It gives it sort of a tropical flavor. I LOVE it this way! I could drink this every day!

Turkey Pot Pie I

this was pretty good. i used a refrigerated crust for easiness and added peas, garlic powder and lots of pepper. i'd add even more pepper next time as it could have used some kick in the flavor. it also didn't have much "sauce", next time i would either add some cream of chicken soup to give it a little more. tasted great though and a good recipe for using up leftover turkey.

Oatmeal and Wheat Flour Blueberry Pancakes

Great recipe! I did change a few things based on reading a number of reviews, however. I added 1/2t. cinnamon and 1/2t. vanilla, used applesauce instead of oil, used regular milk instead of soy and used about 1 cup of blueberries. I prefer also to drop blueberries onto each pancake after pouring the batter as it helps to disperse the more evenly. Very good and I will definitely use it as my new go to blueberry pancake!

Pumpkin Chocolate Chip Muffins

Really good!! I used a few suggestions of other comments...used applesauce instead of oil, brown sugar instead of white sugar and added 1/2 teaspoon of pumpkin pie spice. The flavor was great, although they weren't as moist as I had hoped, so next time I think I'll just use the oil instead. I also baked at 375 for about 23 minutes.

Buffalo Style Chicken Pizza

Very good. I used frozen pizza dough that I baked for 10 minutes before adding the toppings. I also used Ranch dressing because I don't like Blue Cheese. I only used 1 cup and next time I would probably use only half of that, just enough for a thin layer because the dressing made everything really soggy and slippery. I also thought it needed more of the hot sauce flavor. I used 2 medium chicken breasts, chopped very small and about 3T. buffalo wing sauce and I felt like we couldn't really taste the sauce as much as we'd like. Next time I would do more and let the chicken "marinade" in it for a while before making the pizza. Great recipe with some changes for personal taste!

Apple Crisp IV

LOVE this recipe! My mother-in-law had this on the counter for us when my husband and I returned home from the hospital after our daughter was born. We could not refrain from eating the entire thing in a matter of a few days. The topping is absolutely delicious! It tastes like an oatmeal cookie! Definitely our favorite apple crisp recipe!! She used McIntosh apples, which I also loved! EDIT: I made this recipe as well and accidentally chopped the apples instead of slicing them. It took a bit longer to bake, but it was still good. Although it was a tad dry and I feel like it was partially due to the chopped apples instead of sliced. So I'll definitely have to remember to slice them next time as the recipe calls for.

Apple Crisp II

Very good. I did make a few changes based on reviews, one being halving the amount of water to the apple mixture (I used Granny Smiths). Unfortunately lessening the water ended up making the apple crisp a little dry. I would not do so next time. Great recipe, although I prefer one of the other ones on this site because I love the oatmeal cookie flavor the topping has on that one.

Delicious Ham and Potato Soup

DE-LISH!!! I followed the recipe exactly and thought it was perfect as written! My husband and I loved it! My only comments, which are more of preferences...I think 8 servings is a bit of a stretch. I would say more like 6 max. I would therefore probably double, or at least one and a half it next time. We also prefer it with black pepper over white pepper, and with the ham very finely chopped. Topped with some shredded cheddar...perfection!

Peanut Butter Bars I

I love these bars and have had them a lot, but this is the first time I ever made them. This recipe was perfect! I actually only used 3/4c. butter and 1 1/2c. confectioners sugar and it was perfect for us. The PB mixture had a bit of a crisp to it also, which we loved! Almost like the texture of rice krispies. I did find the PB mixture a bit challenging to spread, so I spread it as well as I could and placed the pan in the freezer for ten minutes and it was a lot easier to finish spreading it out. For thicker bars use a dish a bit smaller than 9x13. Great recipe!!

Slow Cooker Chicken Taco Soup

You can't get much easier than this. I threw 3 medium size chicken breasts in frozen and 2.5 hours later they were cooked through and ready to trim up and shred. I did use chicken broth, as beer sounded unappealing to me, personally, for this type of a soup. I also added some garlic powder, cumin and chili powder. Other than that I followed it to the T. I would say that serving 8 is a stretch though. I would say serves 6, max. More like 4 if people want large or a couple bowls.

Chicken Enchiladas II

SOOOOO GOOD!!!!! I did make a few changes and it was absolutely perfect and packed with flavor!! This is officially in my rotation of favorite meals. My changes: I cooked the chicken with some taco seasoning, I added a half can of enchilada sauce instead of the milk, I used jalepenos instead of chiles for more spice, and I doubled all of the sauce (except for the jalepenos) and used one can cream of mushroom and one can cream of chicken. If you have not yet, you must try this recipe!!

Chicken Marsala

This was really good! I did make a number of changes though, hence the 4-star rating. The changes I made: (1)I used an entire package of mushrooms. (2)I only used 3T of both the oil and the butter. (3)I used 3/4c. Marsala cooking wine instead of both Marsala and Sherry. Next time I will still use all Marsala, but I will use a good wine instead of cooking wine. (4)I added a splash of both half-and-half and chicken broth to the sauce. (5)Just before serving I removed the chicken from the pan and in a small bowl I made a mixture of a little bit of water and a little bit of cornstarch, stirred it well and added it to the sauce to help thicken it a bit. Then poured the sauce over the plated chicken. Next time I will definitely do all of this again and will probably add a clove of garlic while browning the chicken, and serve it over angelhair pasta. Yum!!

Best Big, Fat, Chewy Chocolate Chip Cookie

Very good! The only thing I did different was use chocolate chunks instead of chocolate chips because I always prefer those. I am not a huge plain old chocolate chip cookie fan. I like other stuff in with them, so next time I would like to do half chocolate chunks and half chopped peanut butter cups...that would be perfect to me! I'd also like to do half whole wheat flour also. Very good recipe and the name of these defines them well!!

Burrito Pie

YUM!!! So good! I used a little less than 2lbs. of meat (1.65 I believe) and I was able to fit everything in one 9x13. I also added a packet of taco seasoning and more cheese and for the beans I put half of them in the meat mixture and half I spread over the tortillas. Other than that I pretty much followed the recipe as is. Took it to a party and everyone loved it up. Definitely a keeper.
