This was really good! I did make a number of changes though, hence the 4-star rating. The changes I made:
(1)I used an entire package of mushrooms. (2)I only used 3T of both the oil and the butter. (3)I used 3/4c. Marsala cooking wine instead of both Marsala and Sherry. Next time I will still use all Marsala, but I will use a good wine instead of cooking wine. (4)I added a splash of both half-and-half and chicken broth to the sauce. (5)Just before serving I removed the chicken from the pan and in a small bowl I made a mixture of a little bit of water and a little bit of cornstarch, stirred it well and added it to the sauce to help thicken it a bit. Then poured the sauce over the plated chicken. Next time I will definitely do all of this again and will probably add a clove of garlic while browning the chicken, and serve it over angelhair pasta. Yum!!
