Melt-In-Your-Mouth Short Ribs

This was very good. Next time, I will remove some of the broth at the end of cooking, and refrigerate to bring fat up to top. Then will skim, and reheat in a saucepan, will thicken if necessary. I am sure it will make a killer gravy. As is, broth was very greasy, to be expected with the cut of meat. It has potential!

Mexican Bean Pie

Very filling. Use a can of Mexicorn, 1 1/2 Cups picante, 1 can chopped green chiles. Omitted black olives, green pepper and jalapeno. Topped with lettuce, black olives, sour cream and salsa. Everyone ate it up!

Basic Microwave Risotto

Wow, easy and good. Only changes-sauteed onions and garlic first, and added can of mushrooms, with juice, and enough wine to make 3/4 C liquid, put in about 1/4 c cream when cooking was finished. Came out great!

Chicken Piccata II

I made this today for my family, 3 out of four of us liked it alot. So that means I will make it again. I refrigerated the coated chicken 30 minutes, and in the last 5 minutes of cooking, I added 1 Tbs drained capers. Yummy!

Penne Pasta with Spinach and Bacon

This was very good, easy, and the feta on top made it wonderful. Both kids asked for seconds. I used precooked bacon, no olive oil, and fried it up just long enough to grease the pan, then added garlic, for one minute, then tomatoes.

Blueberry Crumb Bars

This was very easy, I just threw the crust mixture into my food processor, voila, it was done in no time. But, my family was not very crazy about it, it needs something, but I can't figure out what. I used cinnamon, and even added some butter extract to crust, but still wasn't great.

Oyster Stew

Excellent stew, creamy and delicious, if you like Clam Chowder, you'll also like this. I used 50/50 milk and half and half mix. Good thing, it's plenty rich.

Asian Roll Lettuce Wrap

Can you say "YUM"? These were great, I just crumbled ground turkey and sauteed with soy, ginger & garlic. Served with carrots/green onions/avacado pieces/freshly chopped cilantro and basil and basmati rice. There were NO leftovers.

Long Soup

This soup was good, my family loved the pork, cabbage and udon noodles. However, no one finished the broth. I used low sodium chicken broth, maybe that's why??

Hariton's 'Famous' Vegetarian Casserole

Really Good, Really Healthy, served withPita, Feta cheese and Ranch dressing. I printed recipe to serve 8, and used fresh cilantro and Italian Parsley instead of dill. Also, added an 8 oz can of tomato sauce, low sodium. Then just added a little water half way through. Yummy!

Honey Bun Cake I

This was very good, very easy and I added pecans to the brown sugar mixture. Also, I made it in a bundt pan, 50 minutes baking time. It was rather sweet, but everybody liked it, none is left!

Best Chicken Pasta Salad

This was OK, but not 5 star. I think the ranch taste was a bit over-powering. Next time I will try it with maybe a caesar dressing and will add cucumber for extra crunch?

Italian Portobello Sandwiches

This recipe has potential, but it is not a 5 star yet. Next time, I will buy the large portobellos, and saute them with some garlic and perhaps a bit of fresh oregano, along with the onions and roasted peppers and perhaps crushed red pepper and S&P.
