Pumpkin Bread IV

Everyone in the family (and preschool class) loved this recipe. I thought 4 C of sugar was going to be too much but the bread was not too sweet, just perfect.The only changes I made were to substitute applesause for the oil and use the entire 29 oz. can of pumpkin. From a single batch I made one large loaf, one mini-loaf, one dozen regular muffins, and two dozen mini-muffins. The mini-muffins took about 18 mins, the regular muffins about 30 mins, the mini-loaf about 40 mins, and the large loaf about 60 mins.

Spiced Pumpkin Seeds

These came out great! Everyone I offered them to loved them. I soaked the seeds in salt water over night and quadrupled the 'sauce', using 3/4 seasoning salt to 1/4 regular salt. Because I doubled the recipe as well, I ended up roasting the seeds about an hour and a half.

Herb Rubbed Sirloin Tip Roast

Ridiculously easy and absolutely delicious! I omitted the cayenne for the sake of my older dinner guests and used one minced garlic clove in lieu of the garlic powder. Also, it didn't mention to do so in the recipe, but I tied the roast so it would cook more evenly.

Dill, Feta and Garlic Cream Cheese Spread

This is absolutely delicious! The only variation I made was to only use 4 oz. of feta because it was all I had on hand but the strength of the feta flavor was well balanced with the dill and garlic. I probably won't increase the feta to 8 oz. next time.

Sage Cream Cheese

This was really good but be prepared, it's a bit sweet because of the lemonade concentrate. Everyone who tried it liked the sage, garlic, sweet lemon combo. I found it to be at it's best about 15 minutes or so out of the fridge and it only got better the second day.

Pizza Dough I

This was exceptionally easy and tasted great. I threw all the ingredients in the food processor with the dough blade and it was ready in a matter of minutes.

Homemade Guacamole

This is a quick and simple guacamole recipe that is easily modified to suit different tastes. For my family, I use twice the tomatoes (seeded) and a small garlic clove. I love that this recipe uses none of the fillers (mayo, sour cream, cream cheese, etc.) that detract from the wonderful taste of the avocado.

Best Brownies

Although other reviews describe these brownies as very fudgy, mine turned out as the perfect compromise between fudgy and cakey brownies. My only deviation from the recipe was to use extra large eggs. I'm not sure if that made a significant difference, but my family and I loved the results. Plus, the recipe is so easy my 3 year old got to help. This is definitely our new favorite brownie recipe.

Awesome Sausage, Apple and Cranberry Stuffing

Wonderful recipe. We baked the stuffing at 350 degrees for 30 minutes instead of stuffing it in the turkey. Turned out great but next time we'll grease the baking dish.

Whiskey Cake II

I substituted a 10oz. bag of toffee bits for the butterscotch chips and was very pleased with the results. The candy pieces carmelized underneath the cake. It was delicious!
