Jumbo Shells Stuffed with Turkey

I made some changes to the recipe based on other reviews (adding some spinach, substituting and using milk instead of cream) and the filling turned out dry and crumbly while the sauce evaporated when it baked, making the creation of a sauce a useless expenditure of work. If I made the recipe again, I would add more ricotta to the filling and add less spinach and turkey. I would bake the shells in vodka marinara and just sprinkle the cheese on top.

Brazilian Collards

Tasty but too spicy. I would probably start with 1/2 tsp of cayenne and then add to taste. I did mine in the crock pot for about 8 hours after browning the salt pork and onion in the pan.

Chocolate Caramel Sauce

Baked Ziti II

Good, but needs a can of diced tomatoes or two to help cut the cheesy sauce. I also ended up with so much sauce stuff that I cooked an extra 6 oz or so of pasta to add.

Mint Pesto Pasta

I would recommend making this only with homegrown tomatoes, as it needs the extra flavour. Like another reviewer, I also didn't add the chopped tomatoes to the pesto in the food processor and instead just spooned them on top of the pasta mixed with the pesto. Other recommendations- add fresh or dried oregano for extra flavour, use rigatoni instead of linguini, as it's easier to stir and eat, and add a little extra water to make the pesto mixture more saucy.

Spinach, Sausage and Cheese Bake

I was looking or something quick and easy to make for a potluck with ingredients around the house, came up with this, and it was great. I didn't have sausage so I used ground turkey with some extra italian spices and used about two cups of cooked pasta instead of half of the spinach. I also used a 14 oz can of diced tomatoes and a 4 oz can of tomato paste instead of the tomato sauce.

Simple Waldorf Salad

I added more apple and celery than the recipe called for. I also plumped the raisins by microwaving them in some water for a minute and toasted the walnuts. I took the advice of other reviewers and reduced the vinegar to about 1 3/4 tablespoons and added about a 1/2 tablespoon of sugar. It turned out tastey!

Indonesian Satay

Excellent! Ours cooked in 5 minutes total and certainly did not need the peanut sauce. I did make a peanut sauce that I put over cooked rice noodles and heated frozen stir-fry vegetables. For my peanut sauce I used about 1/2 cup of creamy peanut butter then added to taste somewhere around 2 tablespoons of light soy sauce, 2 tables spoons of white sugar, a tablespoon of rice vinegar, 1 teaspoon of chili oil, 1 tablespoon of sesame oil, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and about 1/2 cup warm water.

WWII Oatmeal Molasses Cookies

Cookie was really moist and flavourful, especially if you like molasses cookies. I didn't bother to sift the dry ingredients and instead just dumped all but the oats into the wet ingredients. Stirring the oats in at the end worked out perfectly.

Chocolate Trifle

I had some of this leftover the day that I went to pick fresh strawberries and instead of putting the strawberries over a yellow cake that I made for my bf, who isn't very into chocolate, we ended up splitting the leftovers with sliced strawberries on top. I would recommend not sugaring them though, as it would be too sweet and the trifle doesn't need any more moisture. Would be great with fresh strawberries layered in as well. Overall, great recipe, don't be afraid to experiment with it- Definitely worth buying a trifle bowl for!
