Chef John's Lemon Bars

This was my first time making lemon bars and they turned out perfect! The instructions were very easy to follow and explained how everything would look exactly. 1 reviewer said he added 1/4 teaspoon of baking soda to the crust and filling. I made two batches so i tried it both ways and both ways turned out great. One was slightly puffier and taller while the other was thinner and dense. It just depends on how you like them but you cannot go wrong with this recipe! Pay attention to the color of the edge to make sure you don't overcook.

Lemon Zucchini Bread

Fantastic! I replaced most of the oil with apple sauce and used 1/2 wheat 1/2 white flour for a healthier version. I made muffins instead of a loaf for easier baking and kept them in for about 16 minutes.

Zucchini Brownies

Delicious! A little cake-like but it was like a fudgy cake, so really good! I substituted 1/2 of the oil with applesauce and used 1 c white sugar, 1/2 c brown sugar. My zucchini was really juicy so I had to cook a little longer (probably about 37 minutes).

Blueberry Zucchini Bread

Great recipe, definite keeper! I made with slightly less sugar, used frozen blueberries (thawed for a little while) and I sprinkled 2 T white sugar and 2 T brown sugar mix on top, an idea from another review. I put the zucchini in completely wet without drying off at all. I used 1/2 batter for one normal size loaf (350 for 50 mins) and the other half made 12 muffins to save time(350 at 18 mins). Both turned out fantastic!

Cool Whip Cookies

Baked for 12 minutes. Cookies were light, soft and chewy. I wouldn't necessarily bring them to an event, but they are a good cookie to make with a few ingredients on hand.

Pumpkin Cream Cheese Muffins

I was surprised this got such high reviews. I followed the recipe perfectly and they came out exactly like they were supposed to. Pretty moist, not TOO dense but just nothing to rave about. I would not make this same recipe again.
