Carrot Cake III

I halved the recipe and put it in a smaller glass cake pan - I also only had one egg instead of two & probably only had 3/4c of shredded carrots (therefore i added about 1 cup of shredded zucchini and 2 shredded apples to the recipe) and nonetheless, my kids and hubby adored it. in fact, i made it for a party and now i have to make a second tomorrow because my hubby ate too much. (and he hates veggies ;-) (i also put much less sugar and butter in the cream cheese frosting and added a touch of milk.)

Cream of Mushroom Soup II

This soup is delicious and the recipe is VERY forgiving ! Minus the thyme, onions and fresh garlic (although I do put garlic powder), it still turns out excellent ! ! I usually use butter instead of margarine, and water with vegetarian boullion cubes instead of vegetable broth. Whether it is light cream or regular cream makes no difference. It turns out delicious both ways ! Everyone asks for the recipe afterwards !

Spinach Veggie Casserole

Let me start by saying I didn't really follow the recipe all the way through. I didn't have the peppers, garlic, onions, breadcrumbs... SO, I just made the cheese sauce from the recipe, and added the spinach, and mixed it in a casserole with the rice, and cooked it in the oven...and even like this, it was delicious ! I would definently make this again ! The texture was a little bit soupy, as I was lacking so many ingredients, but I rather enjoyed it like that !

Chocolate Chip Dream Bars

My husband loved these so much that he ate them for breakfast ! Instead of using a 9x13pan, I used a 8x8, without changing the recipe ! It still turned out great ! I omitted the chocolate glaze, at it seemed already too sweet ! It browned very nicely on the top with the suggested cooking time, but the inside remained very gooey. However, my husband loved it gooey like that ! It had a nice chewy texture with the crust almost just like a good chocolate chip cookie. However, I used good quality dark chocolate bars (which I hammered into chips), and used much less than the recipe called for. Thank you !

Chococonut Chip Cookies

These cookies are just great ! I made them for my husband to bring into work, and they were gone in two minutes ! I even had a chef say they were the best cookies he ever tasted ! I find that 8minutes in my oven is perfect. It leaves them moist and chewy in the middle ! I use maybe 3/4cups of chocolate chips instead of what the recipe calls for. And, I hammer good quality dark chocolate bars instead of using chips - which are always a cheaper quality chocolate. If you like cookies with a great texture and a chewy center, that are not too sweet, then these are the cookies for you !

Fast and Easy Pancakes

These were better than the "easy pancakes". I suppose the vanilla extract and sugar added some flavour ! However, I used 1/4 cup of sugar instead of 3/4cup, and added a dash of cinnamon. The consistancy was just right for thin pancakes, which I happen to like ! They cooked up nice, and had a good texture. In my opinion, buttermilk pancakes will always taste the best, but if you don't have any buttermilk on hand, these are just great with some butter and syrup !

Easy Pancakes

These pancakes were okay. The texture was good, and they cooked up good, but the only thing that will save them is loads of butter on top and a good syrup - because the pancakes themselves just don't have a lot of flavour. I would recommend adding a bit more sugar or a touch of cinammon just to add some flavour ! But, the title was correct - they are quick and easy !

Lubeck Marzipan

This marzipan had an okay taste. In my opinion, I would leave out the added almond extract. It gives it far too much of an almond taste ! It was hard to make it the right texture without adding too much powdered sugar, so I think I would leave out one egg white next time ! The recipe wasn't very clear on how to store the marzipan after coloring. I shaped mine into fruits, and colored them, but it never really got hard on the outside like the ones you buy in candy stores. I am still searching for the perfect recipe.

Easy Lemon Bars

These lemon bars turned out good, but I have a few complaints. The crust seemed a little dry and crumbly - even with the one cup of butter base ! The two lemons I used produced 8T of lemon juice, and it turned out just fine with adding additional flour. I recommend that you watch the bars, because the 20minutes recommended was too long, and the top really started to burn ! Overall, I would make these again. They had a good flavor - not too sweet.

Deep Dish Brownies

After trying several brownie recipes, I found that this is definently the best ! They are not cakey whatsoever ! They are thick, moist, fudgy brownies - just like they should be ! I also omitted the baking powder and cut the recipe down to two eggs. Sometimes I add pieces of chocolate (it is better to buy high quality chocolate bars and hammer them !) Sometimes I have no vanilla extract on hand, so I do without, and it is still as great ! Everyone asks for the recipe afterwards !!

Alfredo Sauce

This alfredo sauce was excellent ! I used powdered garlic instead of fresh cloves, and used half shredded gruyere and half parmesan - it still turned out great ! I found out that the recipe calls for far too much parsley ! I cut that in half ! Also, make sure the parsley is finely grated; if not, it adds a yucky texture and gets stuck in your teeth !!
