Roasted Cauliflower and Leek Soup

This soup was easy to make and very tasty. (It was hard not to eat up the cauliflower when it came out of the oven). The only ingredient changes I had to make was by using half and half instead of whipping cream and dried parsley instead of chervil.

Pecan Pie V

A friend made this and I was excited to hear it didn't have any corn syrup in it. After tasting it, I was amazed how good it was. It was alittle crumbly, but delicious all the same. Can't wait to make it myself.

Easy Cream Cheese Danish

We first ate this fresh, hot from the oven and my thoughts were it was good but not great. However, we discovered that after it sat and was cold...it was great! I do think there was enough filling that 1/2 of the recipe for it might be better. The dough on bottom didn't get totally done and was gooey in spots, so less filling would probably help. If you prefer alot of filling, putting the bottom crust in to bake for a few minutes before you assemble the whole thing might help. Very good recipe, can't wait to make it again!

Light and Fluffy Spinach Quiche

I used the basis ingredients and added my own vegies (fresh spinach, onion and mushrooms), feta along with the cheddar, some garlic powder and salt and followed others advice of 5 eggs and 1/3c mayo, and I topped it with fresh tomato slices, it was delicious! I use pillsbury roll out crust, which is also as good as homemade.

Baked Pasta

I intended to make this with turkey sausage but ended up with just ground turkey. The changes I made were 3/4 box of pasta instead of a whole box and I just used a jar of pasta sauce instead of the tomato sauce. I also added red bell pepper and added a hit of vodka in it as it reminded me of a vodka sauce. The results were good, but I did think it would be better with the sausage flavor. My husband liked it, as he gets tired of the traditional tomato sauce, also my teenage daughter actually ate it for breakfast the next day.

Scallops Mascarpone

This was very tasty, but also VERY rich. A glass of red wine with it is recommended for the arteries sake! The changes I made were-I used the lower fat cream cheese instead of mascarpone and added a red bell pepper and used 3/4 of a box of pasta. I'm going to reduce the amount of cream cheese next time and use more olive oil, maybe a little chichen broth so it isn't so heavy.

Wedding Cake Frosting

This is a very good recipe for what I affectionately call it- lard icing (as opposed to buttercreme or the whipped creme kind). I made a big discovery here...a box of confectioner sugar is 16oz, but that does not equate to 2cups in a box. There is more in there! So, mine came out too sweet and may be the pb. some of the others are having. One box is more the right amount for a typical sheet or double layer, of course more if you are using it for decorating also.

White Chili with Ground Turkey

I didn't really expect my husband or teen daughter to like this, but both did! I used alittle less broth, no cinnamon but added curry powder. When I was washing the pan, I realized I had left out the green chili peppers. They may not have went well with the curry anyway, it turned out really good just like it was. I think maybe the name white chili gives a false impression to some.

Marinade for Steak I

Very good, did not overpower or change the beef flavor. Sometimes all you taste is the marinade, this just enhanced the steak. My husband prefers his steak "plain" but I talked him into letting me marinade his too. He was impressed and said this recipe was a keeper.

Slow Cooker Cassoulet

This turned out to be a waste of good chicken at my house. We like all these ingredients separate, but together it just didn't work for us. I used chicken broth instead of wine, there really wasn't any juice to eat with French bread. I'm very disappointed when no one eats the leftovers.

French Breakfast Muffins

I had imagined these being light and airy, but they are rather dense, almost like a corn muffin. I followed the recipe exactly and found them lacking in flavor. They reminded me of snickerdoodle cookies, which I'm not a fan of.

Thai Chicken Pizza

I really wanted to like this pizza, with it's rave ratings, but I didn't. I like Thai, pizza, peanut butter, but it just didn't come together for me. Maybe the cheese factor through me off. I followed the recipe exactly except added some red bell pepper. and cilantro. There was no spicy factor and it seemed dry with all the bread. I may try again and play around with it more.

Portabella Burgers with Avocado Spread

Very good! I used a fresh red pepper and cooked it with the onions. I also made the dip out of the whole avocado and used this on the top and bottom of the bun, we dipped our fries in what dip was leftover : ) Thanks for sharing.

Country Apple Dumplings

This is sooo good. 5 star worthy! I cut the recipe in half; used low fat crescent rolls, diet Mt. Dew and followed the suggestion of another rater to use 1/2c. white sugar and 1/4c. brown sugar. I loved the crusty tops and the soft apple inside.

Basil Shrimp
