Easy, Dynamite Cauliflower Curry

Here's what I did: 1) Increased the amount of curry b/c I like curry, 2) Added cayenne pepper to taste, 3) Placed mixture in small baking dishes, 4) pre heated oven to 375, baked for 30 minutes. Came out nice and al dente. I tried the steam method, but it didn't see to go. Love this and will continue to use throughout the year.

Slow Cooker Chicken Thai Ramen Noodles

I cut the chicken and noodles in half, but upped the peanut butter and thai chili paste to taste. I didn't use the seasoning packet from the ramen noodles at all and used one can of chicken stock and one can of water. I may use two cans of chicken stock next time to get more juice. This was wonderful and will be a staple in my house

Skillet Pork Chops with Potatoes and Onion

This is great! I made it with chicken boulion b/c my husband doesn't eat beef. I also didnt use any additional salt. I eye-balled the parm & pepper, but this is great. My very picky 5 & 6 year old kids ate it. I would recommend.

Six Can Chicken Tortilla Soup

THis is SO easy and hearty-great. I can keep all the ingredients in my pantry and pull it out for a quick lunch. I used a can of cream of chicken and a can of chicken stock, not condensed. I also put a dollup of sour cream at the bottom. YUM! So easy, took 5 minutes to prepare and made 3 adult main-meal servings for lunch. You could probably inrease the soup without increasing the other ingrediants and make more servings.
