Pork Tenderloin alla Napoli

Reviewed: Mar. 6, 2005
This recipe is easy and delicious. My whole family devoured it. I omitted the olives, and pureed the tomatoe mixture before I added the cream. It was smooth and made a nice sauce to pour over the pork. This would be a nice dish to serve at a dinner party too.

I love this recipe. It is low in calories and tastes great. I changed the noodle to a wide pasta and left out the lima beans, but it was delicious. It took my husband back to Italy. Thanks.

Kabob Marinade

Reviewed: Sep. 1, 2005
I used this recipe to marinate a flat iron steak for about 4 hours. It was delicious and my kids thought they were eating a very expensive cut of beef. I'll use this marinade on many more recipes.

Calico Squash Casserole

Reviewed: Dec. 30, 2009
I served this on Christmas Day to a family that doesn't eat much squash or zucchini. It was easy to make and tasted great. The family ate up most of it and loved that it was something different from the usual green bean or spinach casserole. I used steam in the bag zucchini and squash to save a step of par boiling them and then cut them up into quarters. It is also a very attractive dish to serve with all the various colored vegetables in it. Thanks for sharing your recipe.

Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Apr. 26, 2010
I improvised a few things but it still turned out to be a family favorite. I exchanged jar salsa for the enchilada sauce and reduced the amount of sour cream. I used store bought grilled chicken and some fajita spices to flavor the meat. It was quick and easy and satisfying.
