Curried Mustard Greens with Kidney Beans

I have to agree with the other reviewers, this was very good! Of course, I changed it to what I had on hand. Browned 2 onions in ghee for about 15 mins before adding 4 cloves chopped garlic, 3 tsp curry powder, 1/2 tsp crushed red pepper, and 1/2 tsp ground ginger. cooked another 5 mins then added 15 oz crushed tomatoes, 1 can coconut milk, kidney bean, and one of those big bags of prewashed and cut kale greens. Added 2 tsp salt, stirred to combine and soften greens a bit then let simmer gently for 20-30 minutes. Stirred occasionally during cooking. This was such a great combination of flavors and had a nice, rich taste. Served over some brown rice. Yum!

Low-Fat Blue Cheese Dressing

I have to agree with another review: I found this to have almost no flavor, even the next day. However, I think it is a terrific base for a lowfat cream dressing. You just need to find other, strong flavors to add to it.

Jordan Marsh Style Blueberry Muffins

Followed recipe exactly, and they were fantastic! I only had "butter flavored" shortening, not sure it made any difference in flavor. batter filled the 12 cups right to the tops and the final muffins were gorgeous. These are not the sticky, overly sweet muffins that so many recipes go for. They are subtle and hardy. I think a full pint of blueberries is perfect, and you'll want to really grease the cups and use a light colored pan. I had trouble getting them out for my first batch and I used a darker pan for the second batch which overcooked them a bit.

Indian Turkey Burgers With Lime, Cucumbers, and Chutney

These are wonderful! I love Indian cuisine and gave these a shot not quite knowing how the flavors would meld with the spinach and turkey. The other reviewers are right, these are great! I followed the recipe nearly exactly except I used 2 tsp of vindaloo blend (Penzy's) instead of the cumin, coriander, cloves, and cinnamon and added another 1/2 tsp salt. The Vindaloo blend contains the same spices plus a few other yummy ones and add to the jalepeno bite a bit. I love the cucumbers on top with the chutney and some lettuce. The ginger flavor is super. I put mine on an Arnold Select Multi Grain Thin instead of pita bread. Fantastic!!

Mushroom and Potato Chowder

This was very good and simple. I didn't have parm cheese, celery, or cream. I used some celery salt and 2% milk to compensate and increased the flour a bit. I doubled the potato, too, out of sheer greed. It was creamy (though I will try to use cream next time) and wonderful. I ate it for three nights running with crackers and hummus. Will definately make again and again.

Gingered Pork Chops in Orange Juice

Despite the many negative reviews of this recipe, I decided to give it a whirl and was please with it. I used peach pucker instead of brandy, but I doubt it really added or detracted from the flavor since it was only a little bit. Since the liqueur did not deglaze the pan enough, I added some of the orange juice to the pan to finish the job. That may have imparted some more flavor, which may be why I didn't find it as bland as some. I also used a heaping teaspoon of salt in the flour mixture

Overnight Pork Roast With Cabbage

This was very good. I made it for guests who all enjoyed it. A couple even wanted some leftovers to take home! I didn't feel four potatoes were nearly enough, and I increased it to six, but I would use even more next time. I'll just make the mashed potatoes on the side next time, too, since the sliced meat looks so beautiful on top of the carrots and cabbage, and I hate to cover it up at all. This dish has fantastic flavor and I am already planning a dinner party around it soon.

Peppy's Pita Bread

Absolutely delicious! Better than store-bought. It's just me, so making them all at once wasn't practical. I refrigerated the dough after it was done in the machine, then rolled out two or three at a time over the next few days. The dough held up great, and I wouldn't change a thing about the recipe! Thanks!
