Downeast Maine Pumpkin Bread

My husband said this is soooo delicious. (I am not able to eat it because I'm allergic to gluten, but it sure smelled wonderful and had a beautiful consistency). As advised by some reviewers, I increased the ground ginger to 3/4 tsp., used 2 c white sugar and 1 c brown sugar instead of 3 c white sugar, and added 1 tsp of vanilla. I used small loaf pans (3 x 5) and it made 5. I'm giving 4 of these away to my neighbors for Christmas and my husband has already almost finished the other one, so I'll be making more very soon. Thanks for a delicious recipe!

Simple Strawberry Syrup

I was looking for a strawberry sauce to serve with homemade angel food cake, and this fit the bill perfectly. I did not strain it because I wanted the strawberry chunks, and I thickened it at the end of the cooking with 1 T corn starch (mixed with 1 T water before adding to the sauce). I also added a bit of lemon juice. It was delicious and a big hit at my grandson's birthday party, served with the angel food cake and whipped cream! I put the leftover strawberry sauce in a jar in the fridge and have used it over pancakes with whipped cream...my oh my! I'll definitely be making this again!

Angel Food Cake II

Made this cake for my grandson's 10th birthday (without the frosting). He has a dairy allergy and is unable to eat most cakes, so it was a perfect choice and he loved it. Several people said it was the best angel food cake they've ever had. It was moist with a great flavor. Quite easy to make. Served it with strawberries, blueberries, and raspberries and Simple Strawberry Syrup (recipe on this site), with whipped cream on the side (for those without a dairy allergy). Lots of compliments received. I will definitely be making this again, because my hubby is crazy about angel food cake. Thank you for this great recipe!

Very Chocolate Ice Cream

This was very yummy, rich and creamy. I would not change a thing. I had no trouble getting it to freeze as others have commented on. Perhaps it's because I put the chocolate mixture in the freezer for about 2-1/2 hours to get it really cold before mixing with the heavy cream. It was not frozen but just really cold before I put in my ice cream maker. My husband said it was "excellent". We ate it with toasted slivered almonds and a touch of whipped cream. Yum.

Lemon Berry Slushy

I had lots of lemons from my backyard tree and my grandson enjoys them very much, so I suggested a slushie and this fit the bill very well. It was just sweet enough, and had a nice tart flavor to it. I'm sure he'll be wanting one again when he comes home from school.

Cinnamon Ice Cream

This ice cream is delicious! It was the first recipe I tried with my new KitchenAid ice cream attachment. It is very rich and creamy. I may decrease the sugar next time to 3/4 cup. A couple of adjustments I made to the recipe: I used 3 egg yolks instead of 2 whole eggs, and I increased the half and half and the heavy cream by about 1/4 cup each. This would be delicious with apple pie or apple crisp or pumpkin pie. Wonderful by itself. A real winner! I will definitely be making this again.

Mariu's Spaghetti with Meat Sauce

This sauce was wonderful! I will not buy jarred sauce again after making this. My husband (whose favorite meal is spaghetti) loved it. He liked the beefy-ness of it. I did add a can of drained diced tomatoes. I will add about a tablespoon of apple cider vinegar and will change the amount of sugar to 1 tablespoon next time I make it. Other than that...it was perfect!
