Angel Hair Pasta with Shrimp and Basil

This was very good. Based on other reviews, I did not add the full amount of tomatoes (just one 28oz can) and I only drained about 1/2 of the juice. I added a tablespoon of cornstarch to thicken it and it was great. I also added mushrooms. Very good recipe. Thanks!

Garlic Green Beans

I love garlic, and this recipe was so good! Thanks Ericka. I used fresh beans and steamed them for about 10 minutes before using them in the recipe and they were incredible.

Chicken Chimi in the Oven

These were very good. Instead of putting in the separate spices, I used a taco seasoning packet that I had in the pantry. I bought a rotisserie chicken from Publix and shredded it, which worked really well, and I only used a half of the recommended cinnamon because I was nervous about it. It gave a slightly different flavor which was great. I also topped with store bought queso, on each serving. I wouldn't recommend adding to the whole dish because it would make the leftovers mushy, just heat up the queso and add when serving. Leftovers were great too. Thanks for a great recipe.

Baked Asian-Style Honey Chicken

I made this for lunch last weekend because I had all ingredients on hand. I used boneless chicken breasts (because that's what I had in the freezer). Note:If you do this, it cooks in about 1/2 the time. The flavor was good, but it was kind of salty. I'll definitely make again since it's so easy & pretty flavorful, but I'll try low-sodium soy next time and the (bone-in) chicken pieces as suggested.

Harvest Salad

Great salad! I made some changes (only because I didn't have some of the items on hand). I didn't have dried cranberries, so I added a chopped granny smith apple, and a always have Lite Raspberry Walnut dressing in the fridge (either Ken's or Publix brand), so I used it. The combination of flavors was very good. I made a big bowl for my fiance and I to nibble on here and there, and I ended up eating the whole thing. :)

Jerk Chicken and Pasta

This was very good, but I had a hard time getting the sauce to thicken. I used cornstarch and then after adding the pasta to the sauce, I let it sit for a few minutes and it thickened a little. I used Bowtie pasta. Definitely will make again!

Chicken, Garlic, and Sundried Tomato Pasta

I loved this recipe!! I used sundried tomatoes in oil and added more than the recipe called for, plus I added baby bella mushrooms, and used low sodium soup. It was great. Definitely a keeper!

Ginger Glazed Mahi Mahi

I loved this recipe! My supermarket didn't have mahi-mahi or a similar fish, so I tried it with tilapia. I had to adjust the cooking time since tilapia is much thinner (around 2-3 minute per side), but it was delicious.

Shrimp Dip I

This dip is really, really good. A friend of mine has been making it for a couple of years and it is always a hit at parties. Try making it in a bread bowl and dipping with the bread. It's great!

Anniversary Chicken II

I loved this recipe!! Not exactly a healthy dish, but well worth it. I used less than half of the recommended ranch dressing because I ran out, but it was still very good. I also used bottled stir-fry sauce which is basically teriyaki sauce as opposed to the soy sauce recommended in earlier reviews. My boyfriend said this is the best chicken I've ever made! Definitely a keeper.

Ropa Vieja

This recipe was good, but I was expecting more of a spicy flavor from the salsa. It sort of tasted like regular pot roast, but I liked it better when I added more salsa after the fact. I will definitely make it again, but will try to spice it up a little more.
