Peach Cobbler I

Un-Slimy Okra

Terrific idea! I did not use tomatoes (none on-hand), but the okra was great! I think any of your favorite coating mixes could be used too, if you don't have panko bread crumbs. I also had to cook a tad longer than indicated, but I like mine extra crispy. So much easier than frying!

Spinach Tomato Tortellini

Terrific! In lieu of tomato sauce and spices, I used 2/3 jar of spaghetti sauce - what I had on hand, and was a handy shortcut! The sauce was so delicious. I could see using this sauce with other variations vs. spinach - chicken, sausage, shrimp. Yum! And you can soak up the remaining sauce with a nice piece of french bread or garlic bread and have very, very happy plates!

Whit's Chicken Enchiladas

Terrific! I was unsure about pouring the heavy cream all over it, but it turned out so delicious! As others have said, this is a great base recipe and you can add veggies and spices as you see fit. Our addition of sauteed onions and a few spoonfuls of diced tomatoes to the chicken mixture was a hit. My kids don't care for anything too spicy, so we used the remaining diced tomatoes on top vs. salsa . Also used another recommendation and used chicken stock vs. water. A keeper!

Brian's German Potato Salad

Yummy! Loved it! I do agree with one of the other reviews that there was not enough "dressing", but this may very well have been my own mistake because I accidentally used self-rising flour. Oops! I added a little water to try and thin it a bit, but it was still pretty thick. After adding the vinegar sauce to the potatoes, I doctored it with just a little bit of mayo mixed with spicy brown mustard, just to add enough sauce to cover the potatoes. (got this idea from another recipe that used vinegar, mayo and mustard) I will definitely make this again!

Mini Meatloaves

Terrific! Whole family loved them...even the picky ones. There was plenty of sauce, in fact I had some leftover. As some others mentioned, I did throw in some garlic powder, onion powder and Worchestershire sauce, but even without them, I still think they would have been pretty good. Yum!

Beef and Spaghetti Pie

Tried this tonight and it was terrific! Husband and kids all liked it. I used a few substitutions based on what I had on hand: Ragu Sauteed Onion and Garlic spaghetti sauce (I think any jar sauce will do, actually) instead of Classico, and McCormick Chopped Chives instead of green onions. Will definitely be making this again!
