Low-Fat Blueberry Bran Muffins

Reviewed: Aug. 12, 2003
This was just what I needed, a high fiber muffin with flavor. I used 100% bran cereal and not sure if this is what wheat bran is but they turned out good.

These were just as described, "cake like" with just the right amount of sweetness.

Exactly what I was looking for. They are soft and chewy and have a great flavor - easy to make also.

I use this as my standard pizza dough recipe. Makes a great all around crust.

These are messy to make but worth it!! I love to freeze them and eat them cold. So simple so divine.

Eggnog Quick Bread

Reviewed: Jan. 7, 2004
The recipe is missing something. The nutmeg flavor did not stand out nor did the rum. Perhaps it could have been enhanced by drizzling with rum or rum flavored frosting. Otherwise it had a nice texture.

Pralines

Reviewed: Jan. 18, 2004
This was my first attempt at making pralines and I was delighted with the results. We had just visited the French Quarter in New Orleans and I fell in love with their pralines. But these are not as creamy as theirs, a little more sugary. I did use Half n Half instead of evaporated milk so I don't know if this made a difference. I was very happy that they turned out on my first attempt. I cooked them to 239 deg which caused them to set up perfectly. Maybe I will never taste Pralines like the ones in Lousianna but I can hope.

Whipped Cream Frosting

Reviewed: Jan. 22, 2004
Great taste, my family loved the taste but it does not stand up well as a frosting. I should have read other review before I made it and I would have known. Would be a great topping for single servings though. I used it on a layer cake as the filling in the middle then frosted the outside with chocolate. It made a great filling.

Spinach and Strawberry Salad

Reviewed: Jun. 8, 2004
I really liked this recipe but my family was reluctant to try it. Hubby liked it but the girls said no way. It seems like the kind of thing you would find in a tea room - very classy. I would only make one change and that would be to use less berries, maybe half as many. After all of the spinach was gone I was left with a bowl full of berries.

Grandma Johnson's Scones

Reviewed: Nov. 10, 2004
This was my first attempt at scones. It is everything I expected! I did underbake them a bit even though I went the full 15 minutes but I can adjust that next time. I divided dough into two bowls so I could try different flavors. It was easy and I will definitely use this recipe again.

Taco Treat

Reviewed: Dec. 20, 2004
I added a few less jalapenos and also about 1/4 c. shredded cheddar cheese. I also increased the olives. Still I will rate this recipe high even though I made some changes because the basic flavors are just super! Oh yes, I also used sundried tomato tortillas which made a more festive appearance and melded well with the flavors in the spread.

Amazing Ribs

Reviewed: Oct. 28, 2005
I followed the recipe but started with frozen ribs so the ribs did not get as tender as I would have liked them to be. Next time I would thaw them. Otherwise this was my first attempt at ribs and I think it is a very good technique to get the best ribs.

It was very good except I was looking for tart lemon taste. This would be great with chocolate pudding instead.

Easy Turkey Tetrazzini

Good and very easy to make. I used cream of chicken soup but mushroom would be good too I think. I mixed noodles with sauce before baking. Great use for leftover turkey.

New York Cheesecake II

Reviewed: Jan. 1, 2006
I followed many of the tips given by other users like baking at 350 deg., adding vanilla and adding 1/4 c sugar to make it sweeter. The cheese cake was perfect except where is the flavor in this cheesecake??? I topped it with cherries and that helped but this otherwide perfect cheesecake lacks flavor. I would love to try it again but somehow jazz up the flavor.

Lemon Jelly Filling

Reviewed: Feb. 5, 2006
I almost ruined this recipe. After placing the pan on the stove I soon realized that it should be cooked in a double boiler! OK. My lemons were large and I ended up with a total of 1 cup of lemon juice. Because of that, it did not thicken up like I thought it should. I wanted it thick so I could spread it on a cake so I added about a 1Tb of cornstarch stirred in with a little hot water to thicken it up. Still it wasn't quite as thick as I thought it should be. However it tasted great, just what I was looking for. This is how I used it. I made a "poke" cake where you pour lemon jello mix over the cake which has had holes poked in it. I then spread this lemon filling over the top of the cake. Then I topped it with Cool Whip. It tasted great, very lemony and tart like we wanted. It would be nice to know how much lemon juice is needed since all lemons are not created equal in size! Once I know what the optimum amount of juice is the recipe will be perfect. 5 star rating for taste.

Make-Ahead Mashed Potatoes

This recipe was excellent and a real time saver when you are cooking for a lot of people. I used garlic salt instead of onion and added some minced onions. Also I added bacon bits and some cheddar cheese. It was just what I was looking for.

Chocolate Bavarian Torte

Reviewed: Feb. 18, 2007
The flavor for this was a little flat for me. Maybe if I had used a dark chocolate cake mix instead of devils food flavor it would have been better. I served with chocolate syrup and raspberry syrup which really improved the flavor. Very easy to make and that is a plus.

Tiramisu Cheesecake

Reviewed: Mar. 19, 2007
Not like the tiramisu flavor I have experienced. Was more like Kahlua flavor. I did use kahlua for the coffee liquer ingredient which I think imparted a flavor too strong for this recipe. Used lady fingers for crust but I think I like graham crust for cheesecake.
