Arugula-Fennel Salad

I have been looking for ways to use arugula and this is a nice basic start. I would add some other flavors but not sure what, maybe orange segments or something. The lemon dressing pairs very nicely with the bitter arugula. Will be eating this more often

Ginger Rhubarb Crisp

I gave it 4 stars but my husband would have given it 5. The filling is on the tart side for me but this is exactly how he likes his rhubarb. Otherwise a pretty good recipe. Ginger and orange zest add some interesting flavors. Will probably make this again.

Healthier Baked Pork Chops I

Surprisingly good, easy and very little clean up. Pour soup around the chops rather than over to keep the top crispier. Will make this again.

Sam's Famous Carrot Cake

If you like your carrot cake fully loaded, dense, & rich then you will like this one. I baked it in a 9x13 pan for about 40 min resulting in something more like bars than cake. Tasted great with a cream cheese frosting.

Hot Cross Buns I

In a word these are FABULOUS. Buns were light, tasty what can I say? I used my bread maker to make the dough so it was super easy. This will be an Easter tradition for us from now on.

Basil Tomato Soup

Too bland for me. After one taste I added garlic salt and pepper. Then it was pretty good. Thought it needed more basil. I would have liked a creamier texture. I would definitely add salt, pepper and jalapenos if I made it again.

Apple Pie

I also turned down the oven temp as suggested by others as it was browning too fast. The lemon zest gives this a nice flavor. My apples were not as tart as Granny Smith so the zest helped bring out the flavor.

Very good basic recipe. If you like things spicy you can easily spice it up like I did with jalapenos an enchilada sacce etc. Will definitely make this often. Even better leftover

Flan I

Used 9 inch pan and it was only 1/2 inch thick. Texture not as smooth as I wanted. Flan was not as custard like as expected & was more hard than expected. Good enough flavor but not what I was looking for in a flan recipe.

Scalloped Rhubarb

I made this recipe as is. It was a little too sweet for me. I used four hamburger buns for the topping which totaled 6 oz. It is a rich and flavorful dessert, very tasty but next time I will change it a bit. I would double the rhubarb just because I like lots of rhubarb and like it less sweet. I also think it needs more liquid in the rhubarb, something to soak up the bread a bit. Overall I think this recipe is a keeper and worth repeating.

Fluffy French Toast

This recipe has the right ratio of eggs to milk but I don't understand the need for flour. I thought the flour created a kind of pasty taste. If the flour has a purpose I think it could be reduced to a Tbs or two since most of it sunk to the bottom of the bowl. I would try this again but use more sugar and a lot less flour.

Spicy Mock Apple Rings

I make lots of pickles and this is a favorite among those who love cinnamon flavoring. I use very large cucumbers which I first peel and scrape seeds out of then cut up into sticks. They fit in the jar easier. I sometimes add a drop or two of cinnamon oil to the syrup for more cinnamon flavor. This recipe is often made with sliced cucumbers where seeds are cut from center to form a ring. These are known also as Wedding Ring Pickles. Most people are surprised they are made from cucumbers, they seem more like apples.
