Kale and Quinoa Salad

This was so wonderful and quick! I used bagged organic kale from Trader Joes (one bag was a perfect amount). I made the dressing and then massaged it into the kale for a minute and then added the quinoa while it was warm which further softened the kale. Once cool, the cheese, raisins and nuts went in. I make a different kale salad all the time, but this has just become my favorite. With the addition of quinoa, it is a nutrition powerhouse!

Cilantro-Lime Dressing

I was looking for something 'vegetable' to go with our Mexican meal and this was AMAZING. What a perfect dressing...I can't get enough. Mixed with salad greens, avocado, black olives, crunched tortilla chips, frozen corn soaked in water to thaw and a bit of Monterrey jack cheese. Would be good with chicken on top, but I don't eat meat. This is my new favorite salad, and cilantro is SO good for you.

Frosty Strawberry Squares

Made this as a birthday treat for my husband. It was a hit and my first attempt to whip egg whites (easy after all:). I did chunk the strawberries so they would be easier to eat when frozen. Perfect for a hot summer day.

Crab Quiche

The first few times I made this, I used real (canned) crab and it was delish. Then I used the fake crab as called for and it had much more flavor. With the canned crab, no one even know there was crab in it until I told them...it was delicate. Both good, but different, so give it a try both ways.

Chocolate Rum Balls I

Thai Ground Chicken Basil

I was not sure we could pull this off sucessfully with the limited ingredients we had, but regular soy sauce and sweet thai chili sause worked great and we put it on a bed of baby spinach borrowing the idea of wraps from the other reviewer. Smelling like garlic is worth it for this one.

Lentil Quiche

It was between a three and a four. I really wanted to love this as all of the ingredients are in my faves. I doubled it and put it in a casserole dish and it was very quick and easy so it does have that going for it.

Bran Flax Muffins

I have made these three times now. After the first try, I double the recipe because they are SO wonderful. I do use half whole wheat(more fiber) and half spelt (more protein) flour instead of white and cut back on the sugar. This whole wheat version takes about 35-40 minutes in the oven.

Red Pepper and Corn Relish

I have only just mixed this up...thought it has not had time to set in the fridge, I can't stop eating it. I have made this for a vegan pot luck and I am sure it will go over great. I used a jar of roasted red peppers and will use the leftovers for the red pepper humus on this site that is to die for. (Spiced Sweet Roasted Red Pepper Hummus)

Spiced Sweet Roasted Red Pepper Hummus

If I could kiss you, I would. This is the recipe I have been searching for!! There is a national brand that makes a 'fourty spice' hummus. I have been trying to find something that tastes like it and THIS is it. (It looks like it too.) I used a little less of the hot stuff, and used roasted garlic. It is perfect. Wow, the money I will save, and there is nothing unhealthy in it either. Thank you so very much!!! ***Been making this for years! Simply the easiest thing to make. I don't dice anything...just plop it all in the food processor and let it spin. I do add olive oil and when I have fresh cilantro I use that in place of the parsley and that is amazing. I also add a bit more cumin and garlic, but that is personal preference.

Pumpkin Pancakes

These were a crowd pleaser for a girl's sleepover. Everyone from the girl who only eats salad and drinks water to the girl who already had two Dr. Peppers that morn, loved them. I used buttermilk in place of the vinegar and milk and also whole wheat/ww spelt combo. Next time I will add chopped pecans or walnuts as it needed some crunch.
