Crab Quiche

The first few times I made this, I used real (canned) crab and it was delish. Then I used the fake crab as called for and it had much more flavor. With the canned crab, no one even know there was crab in it until I told them...it was delicate. Both good, but different, so give it a try both ways.

Cilantro-Lime Dressing

I was looking for something 'vegetable' to go with our Mexican meal and this was AMAZING. What a perfect dressing...I can't get enough. Mixed with salad greens, avocado, black olives, crunched tortilla chips, frozen corn soaked in water to thaw and a bit of Monterrey jack cheese. Would be good with chicken on top, but I don't eat meat. This is my new favorite salad, and cilantro is SO good for you.

Asian Stir Fry Sauce

We eat this almost once a week it is go good. The only change is leaving out the corn syrup...the one thing that was making this recipe not healthy.

Bran Flax Muffins

I have made these three times now. After the first try, I double the recipe because they are SO wonderful. I do use half whole wheat(more fiber) and half spelt (more protein) flour instead of white and cut back on the sugar. This whole wheat version takes about 35-40 minutes in the oven.

Barbie's Tuna Salad

I discovered there was only dill relish in the pantry and no onion flakes. Everything else was added and it was great. Ok, so I did add more cheese, but we love parmesan.

Green Bean Casserole IV

I made this two times. Once as the recipe directed and the next time with mushrooms and a few more spices. Neither time did I love it despite using quality ingredients (ie, organic beans from Trader Joes).

Fast and Easy Spinach with Shallots

I used onion, garlic and a bit if nama shoyu (raw soy sauce) for liquid to help it wilt faster. I served this with Lemon-Pepper Salmon II and it was restaurant quality.

Roasted Brussels Sprouts

I could not stop stealing these out of the dish while everything else finished cooking. I made two little changes. I use coconut oil instead of olive in most things as I did in this recipe and I added three cloves of garlic, oh, and I cut them in half. I agree with others that the little blackened leaves are the best part.

Vegetable and Tofu Stir-fry

I was in the kitchen ALL night for this one, but it was tasty. I fried all the veggies and kept them warm and then made the sauce in the wok, adding everything back to get hot again. I did double the garlic and the sauce which was a good thing. Served it with rice noodles...yum!

Red Pepper and Corn Relish

I have only just mixed this up...thought it has not had time to set in the fridge, I can't stop eating it. I have made this for a vegan pot luck and I am sure it will go over great. I used a jar of roasted red peppers and will use the leftovers for the red pepper humus on this site that is to die for. (Spiced Sweet Roasted Red Pepper Hummus)

Easy Masoor Daal

Very good recipe and I will be making it again. It was a bit dry so perhaps I need to make an adjustment on the water. I did throw in some garam masala on top of the other spices and the flavor was great.

Curried Honey Mustard Chicken

Will be making this again! I used chicken and tofu and baked together. It did need a double recipe of sauce. Next time I will cut back on the butter as I felt guilty about eating it for that reason. Served with Easy Masoor Daal also on this site, peas and rice.
