Since I have three kids and a husband whose birthdays all fall in the first three months of the year, I'm all about cakes right about now.

I love cinnamon! I keep a giant jar in my pantry and don't measure. Cinnamon is good for your metabolism, plus it smells great!

I make oven pancakes or Swedish pancakes nearly every morning.
My cooking triumphs
There are two kinds of interesting challenges in cooking: making up something with what you have on hand, and making something delicious when the group you're cooking for includes a person who is allergic to some basic ingredient. Last week I was making dinner for a small group that included someone who couldn't have wheat and someone who couldn't have dairy. That was easy, it was the birthday cake at the end that was a challenge. I made this chocolate flourless icecream cake with cherries jubilee on top but I did make a separate cake for the woman who couldn't have dairy. Earth Balance Sticks did work in the cake but the flavor just wasn't as good as real butter. Yum!
My cooking tragedies
I think it's a tragedy when I work to make something delicious and a child rejects it or eats it rudely. We don't insist that our children eat everything, but it's hurtful to act disgusted by food you are given.

Wonderful Waffles
If you only have one mixer: get out two big bowls and a little bowl. Start by separating the eggs and whipping the whites in one of the big bowls. (set that aside) In the little bowl, mix the flour, baking powder, baking soda and salt with the mixer. In the other big bowl, whip the brown sugar and the egg yolks, then whip in the softened butter. Pour the buttermilk into that mixture and keep mixing until it's all creamy. Put away the mixer! Use a spatula to combine the flour and buttermilk mixture. Then mix in a quarter of the whipped egg whites with that spatula. The last of the whipped egg whites will then easily and gently fold in with your spatula. You are going to love these waffles!

Big Soft Ginger Cookies
I love this recipe! Chilling the dough makes it easier to work with. I have substituted olive oil for the margarine, they still come out great. I have even made them with double the cinnamon and no ginger (for cinnamon lovers). If you like snappy ginger cookies just bake them at 375 degrees. But soft is superior, if you ask me!

Easy Granola Bars
These work great! I read the reviews and used greased parchment paper in a jellyroll pan. I cut them as soon as they came out and covered with foil, flipped them over on a cooling rack right away. I have made them with many different ingredients and they're always great! Just keep to about 3 cups oatmeal and about 3 cups add-ins. This would be a good recipe for those who have nut allergies with coconut, chocolate and dried fruit!
