Tuna Noodle Casserole from Scratch
I thought this was a great base! I needed something that didn't have dairy, so no can o' ! This was easy to adjust to be dairy free with soy milk and margarine. I ended up using almost a whole additional cup of soy milk, and really it could have used more. I added some chopped carrot as well as half a jalapeno. Then I crushed up these crappy croutons we had on top, it was delish! Thanks for posting this blue collar gem!

My Husband's Pad Thai Noodles
This was very good, but VERY spicy! I even left out the chili oil, and holy cow it was hot! I ended up using almost a cup of melted creamy peanut butter with some rice vinegar and brown sugar and stirred that in.... still spicy, but much easier to eat. This also made a very large quantity. Lastly, I am no major chef, but the prep time an this was about 60-75 minutes.... this is no quick weeknight meal. BUT, again, thank you so much for posting!

Fresh Strawberry-Oatmeal Cookies
I halfed this recipe because I didn't have enough straawberries for a full batch. They were OK. I have to use margarine and soy milk, so that probably changes things a bit. So many other reviews talked of them being too runny? Mine are almost too dry, so I don't know what went wrong. I enjoyed the cookies, they seem "healthy" with the oats. This is a creativ base recipe to use up strawberries. Thanks for posting!
