I am from Nicaragua, living in Toronto,Canada since Nov 1988, married with 4 sons, my love for cooking begun when I had to prepare breakfas for 4 hungry boys so I started reading recipes and soon I was in charge of the cooking on weekends. While my wife is more like traditional home cooking I try to do fancy stuff more kind of recipe guy.
My favorite things to cook
I specially enjoy summers bbq and Christmas dinner wich I prepare complete that include the salad, the turkey and another side dish. When I am cooking I need my music, my drink if is the time (like in summer beer and bbqing)
My favorite family cooking traditions
The turkey in thanksgiven or Christmas. I love when the house is inundated with the aroma of the bird when is in the oven.
My cooking triumphs
One year I decide to cook a whole pork leg instead of turkey for christmas. I was so nervous since I never cookek a whole leg but thank God everything went ok an now is requested when we have a big gathering at home with friend and family.

Louisiana Shrimp Creole II
In my case, the recipe was easy to cook the sauce was ok, I used old bay instead of chili powder but next time I would add some kind of seasoning or maybe just salt for the shrimp while I am preparing the recipe since I think the shrimps were kind of unflavored. Definitively I would do it again.

Mom's 'Sweet 'n' Sours' Pork Ribs
I made this recipe with a small change, I put the garlic in the last minute of browning since I like the smell of frying garlic so I though it would be better that way and it was. I am thinking in summer using the same sauce for glazing in the bbq. Excellent recipe.
