Citrus Shortbread Cookies

These are wonderful! They were zesty, fuity with a wonderful texture. I only made two small changes: As another reviewer, I only used 1 cup of chopped cranberries which we found to be plenty! Also, I never had any almond extract so I decided to add 1/4 cup of toasted crushed almond slices. I am not a hugh fan of almond extact but using the real toasted almonds was amazing and really made a difference. Since it said to divide the dough into two logs I decided to add the almonds (1/8 cup for half the recipe) to one log and omit them in the other to test the difference. The cookies without the almonds tasted more fruity...you could really taste the orange and cranberry. The almonds added a more comlex and interesting flavor where all the flavors came through and none were overpowering. We liked both but the cookies with the almonds were our favorite! To toast the almonds: spread sliced almonds on a baking sheet and bake in a 375 deg oven for 3-5min until they look lightly browned. Let cool and crush.

Lime Bars

I gave these 5 stars because this recipe is delish and even though I made a few small changes, the origional recipe would be still be great! I didn't put the glaze on top, just a dusting of powered sugar and they were great. However, there are a few things I would change in the recipe the next time I make these. First, I did use butter instead shortening because I like the flavor in a shortbread crust much more and will do so next time also. Second, I didn't like the ratio of crust to filling, about 50/50. Next time I will double the filling. Third, I increased the amount of zest a little to about 1 tablespoon because that was how much I got from one lime and wanted to use it all. I did only use the 1/3 cup of lime juice as the recipe calls for and overall I thought the lime flavor was great. (Other reviewers suggested to use more since the flavor wasn't strong enough.) I really liked these and will make them again for sure! Thanks

Kid Muffins

Great muffins...really moist and tasty! I made them as mini muffins for my 16 month old and he ate 3 of them as soon as they came out of the oven and it wasn't even meal time :) I only made a few small changes: I used healthy oil instead of butter, I chopped up apricots(without soaking) instead of using raisins, I used 2 tablespoons of flax, and finally I only used 1/4 cup of brown sugar and they were plenty sweet! Thank you for such a great recipe. Next time I think i'll add some pecans and blueberries.

Coconut Shrimp I

Great recipe! I didn't refrigerate them before frying (never had time) and they still turned out perfect. They are light, fluffy, and golden with that wonderful coconut flavour. I also used the angleflake coconut insted of the drier grated kind.

Oatmeal Pancakes II

Love this recipe...I just made them! They are just as light and fluffy as regular buttermilk but they have a better flavor! We used to go out to a large chain breakfast resturant for pancakes but I think we'll save our money from now on and make these instead...much tastier and healthier!

Shrimp Butter

My husband and I really liked this. As another reviewer said, after the first few bites it gets addictive! I used twice the amount of shrimp and not from a can, I used frozen cooked salad shrimp. Also, I didn't blend the shrimp with the rest of ingredients, I diced them up. The only thing is, I wish I knew what to eat it with! We tried every type of cracker we had as well as pita chips and tostitos and the only one we liked it with was buttery crackers. I'd love to have more options but i'm gonna keep trying because it is good! Next time i'm going to use sour cream instead of mayo and maybe more garlic or fresh (as another reviewer did).

Broccoli Mac and Cheese with Bacon and Potato Nugget Topping

We weren't a fan of this recipe, it was just OK. The flavor was ok but it was far from cheesy enough for us. Alsom if you are going to try it, I wouldn't suggest making it with fat free milk like I did, I had cooked chunks of milk in it, and I did mix it well before putting it all in the dish! The only thing I did different from the recipe was leave out the potatoes/taters.

Easy French Dip Sandwiches

Great sandwich and so easy. I added half an onion to the consomme and heated it on the stove until the onions were soft. This gave it a wonderful flavor, like french onion soup, and I love the soft onions on the sandwich :) Next time i'm going to use Focaccia bread!

Reuben Sandwich II

Great sandwich! I used more meat and sauerkraut with seeded rye sourdough bread and fried them in the frying pan. They turned out great, my husband and I loved it. Next time i'll try it with a different type of sauerkraut and with pumpernickle bread.

Pumpkin Oatmeal Chocolate Chip Cookies

These are great cookies! Really soft with a nice pumpkin flavor and not too much spice. Take note of the amoount it makes...6 dozen! They aren't as much like oatmeal cookies as I thought they would be, I found it was almost unnoticable.

Salmon Croquettes

These are great! I don't like to review recipes if I don't make them exactly by the recipe but these were so delish I had to. The main difference was I didn't use any celery because I never had any. The other small changes I made are; 1/2 tsp of dry dill (I never had fresh I this was the perfect amount of dill flavor for us), I also added about 1 tsp of lime juice...I added this to make up for the 'fresh' flavor that the celery would have given it. I will definately use it again! Also, if you do not have wheat germ I suggest you buy some for these...besides the healthiness that it contributes, the flavor is amazing and I don't think anything else would be as good. It adds a wonderful toasted wheat and nutty type flavor...sooo good! I served these with tarter sauce (a perfect compliment which I usually don't eat with salmon) and Seven Grains garlic quinoa and wild rice and zucchini. This turned out to be one of the best meals i've made in a long time so Thank You for this recipe!

Raspberry Lemon Muffins

LOVE these muffins!!! They were nice and fluffy, have lots of flavor, and are just sweet enough...they don't taste healthy at all :) This recipe only made 9 regular sized muffins for me and I used baking cups. I made them as per the recipe except I only used 1/2 cup of sugar and they were plenty sweet. Next time I may even try using only 1/3 cup of sugar. I did use the lemon extract and doubled the lemon juice cause I wanted to use the whole lemon and not waste it. I love lemon flavor and this was the perfect amount! These are going to be a staple in my recipe box! Thank you so much for sharing it!!

Lemon Chewy Crisps

I really liked these cookies and so did everyone that ate them! I made it with the same ingredients except I used lime instead of lemon...I love them both but was in the mood for lime :) Also, I noted that some reviewers said that the lemon flavor was a little weak so I added another 1/2 Tbsp of zest and the flavor was great! My cookies didn't come out very chewy though, more like chewy fluffy sugar cookies. When I made them I wasn't ready to bake them right away so I put the dough in the fridge. When I took it out, I rolled it into a log and cut off between 1/4 and 1/2 inch thick cookies and baked them like that. So if you like fluffier cookies, bake them like this :)

I don't think I will make this one again :( I love all the ingredients, that's why I chose this recipe, but I guess I don't like them all together. Maybe if I left out the garlic and/or onion? I don't know!

Hop, Skip and Go Naked

This was really good...not sweet or boozey tasting. The first two sips I would have given it 3 stars but it just kept getting yummier :) It tastes great if you use cherry Brandy also. If you like cranberry juice...try it!

Blueberry Pumpkin Muffins

Great muffin, very moist and tasty! I make them for my 17 month old and he loves them! The only changes I make to make them a little more healthy is I only use olny 1/4 cup sugar, I use whole wheat flour, I use oil instead of butter, and I add 2Tbl ground flax seed.
