American Lasagna

Reviewed: Aug. 13, 2003
I also used half HOT Italian Sausage and Ground Beef and my boyfriend raved about it! The hot sausage gave it a spiciness. He said it was better than his mom's. It does take a while, but it is worth it. It made me go from a beginner cook to an excellent cook in everyone's eyes!

Chicken Enchiladas I

Reviewed: Aug. 13, 2003
This is one of the best recipes I have tried on this website. I made the Red Enchilada Sauce instead of the taco sauce that is on this site. Everything was wonderful and VERY filling!

California Primavera

Reviewed: Aug. 21, 2003
I was really surprised at how good this was. I love tomatoes so I added about 2 cups of pasta sauce, some fresh diced tomatoes, and about 16 ounces of crushed tomatoes (left over from another dinner.) The garlic, tomato, mushrooms, and vegetables all melded together so wonderfully! Thank you for this fantastic recipe. What a great twist to normal boring pasta!

Awesome and Easy Creamy Corn Casserole

Reviewed: Aug. 21, 2003
This would have been good if I didn't add the jalapenos. This wasn't in the original recipe, but after many reviewers suggestions, I tried it. I liked it, but the boyfriend didn't. Perhaps if I chopped them super fine it wouldn't have been as hot? Otherwise, a good recipe.

I don't even like Cuban sandwiches, but I knew my boyfriend did. This made ME like them! Great recipe exactly as written.

Banana Pudding IV

Reviewed: Aug. 28, 2003
Excellent, excellent, excellent!!! With a dessert recipe this good, you'll need the big bowl it ends up making. My sister and I finished the whole thing off in 3 days. Whoops. I'll make this again without a doubt. (I did use a whole box of wafers, 7 bananas, and a little less sweetened condensed milk.)

Chicken Tortilla Soup V

Reviewed: Sep. 10, 2003
How excellent is this recipe! Make sure you put the tortilla chips in the bottom like the recipe instructs. I was not going to do it but I am glad I did. Excellent flavor and very easy to make.

Tomato Chicken Parmesan

Reviewed: Sep. 10, 2003
This was good and smelled great. Not anything to write home about, but maybe that's because I don't like chicken parmesan. All in all, an easy and pretty good recipe. 3/31/08 - Ok, I am changing this from 4 stars to 5 stars. I made this again and the boyfriend just LOVED it. I did too. So easy and so good. Will go into our regular rotation.

Cream Dill Sauce

Reviewed: Sep. 10, 2003
Didn't think this was good. Tasted too much like mayonnaise and not like the dill flavor I was hoping for. Perhaps this is because I used Miracle Whip.

Daddy's Fried Corn and Onions

Reviewed: Sep. 10, 2003
Make sure that you cook the onions to the point that they are not still hot. It overpowered the corn flavor and we had to throw them away.

Key Lime Pie I

Reviewed: Sep. 10, 2003
My boyfriend is the KING of Key Lime Pies and had just recently squeezed a bunch of key limes and frozen them. What a better time than this to make his favorite pie? He LOVED it!!! Thank you so much!

Cioppino

Reviewed: Sep. 16, 2003
What a wonderful recipe! I used bay scallops, shrimp, cod, and canned clams. I reserved the clam juice and simmered with the stew before adding the seafood. My boyfriend absolutely raved about this one.

Good recipe, although I followed the advice of another reviewer and put more chili powder in it. It was really spicy, but still good.

Toaster Oven Pizza

Reviewed: Oct. 26, 2003
This was pretty good for minimal effort. I just put some spaghetti sauce on it, then some tomaotes and onions on it b/c that was all I had. Also sprinkled some garlic powder on it and some ground black pepper. Popped it into the toaster oven, and there was my dinner. Good for a night when you are too tired to even think about cooking.

Tomato Spinach and Bean Burrito

Reviewed: May 21, 2004
I thought this was horrible. Maybe it was because I substituted the kidney beans for chickpeas. All I really cared about when I started eating it was the sour cream and salsa. I don't even think I can finish it. Yuck!

Pita Pizza

Reviewed: Feb. 25, 2005
Wow - I really didn't think the pita would be such a good pizza crust! It was much better than any thin crust pizza I have had before. This is such a versatile recipe -so this is how I made it my own. I used whole wheat tortillas, sprayed with fat free cooking oil, huge spoonfuls of tomato paste, big chunks of fresh garlic, left over grilled chicken that I cut into big bite sized pieces, red onions that I already had chopped from before, fat-free mozarella and cheddar shredded cheese, and dried basil, oregano, and parsley. Put it in the grill for 6-7 minutes (had to wait for the cheese to melt). It was FANTASTIC. I kept a few pitas on hand so I can change up the ingredients for the next batch. Thanks Mindy!

Chili Chicken Stew

Reviewed: Mar. 7, 2005
This didn't look like it was going to be that great, but it was! I think the cream of chicken soup really made the stew. It gives it a deep rich flavor like cooking with wine usually gives soup. Great recipe!
