Burrito Pie

My family really likes this recipe. I am always looking for delicious meals that I can freeze a portion of, as I have a chronic illness that severely limits my activity. This one fits all the criteria and it was wonderful yesterday when I didn't have the oomph to do meal prep to get the second pan out of the freezer and pop it in the oven. My family was saying yum all the way through supper. Thank You Kathi

Pat's Mushroom Saute

These mushrooms are soooo good. I made them as I side dish. Didn't use buttons but instead regular mushrooms on the larg side. I cut them in quarters, sauteed them for 20 min. Had to make more because my daughter and friend could not stop eating them and my husband didn't get any from first batch. I think these are best served and eaten immediately and not reheated. Haven't been able to find out though as they do not last long enough.

I think I underbaked this. Everyone else said it was excellent but I'm not completely satisfied with it. My Mom loves it so will try it again and bake longer.

All Day Apple Butter

We have a couple yellow transparent apple trees in our backyard. The apples are a bit on the tangy side and made wonderful apple butter. I wasn't certain how many apples made up 5-1/2 lbs so I filled the crock pot almost to the top. I cut the sugar in half - down to 2 cups - and added same amout of spice as given. It turned out great. My mom is diabetic and loves apple butter. Though I gave her a small jar of this I am going to try making a batch with Splenda and see how it comes out. Really really good and was fun to make.

Cuban Midnight Sandwich

I haven't the faintest idea what a Cuban Sandwich is but no matter the name this is tasty, easy and versatile. I followed some of the other reviewers and cooked them on the George Foreman Grill. I sloshed quite a bit of the mayo/italian on, only a little messy and as per other reviewers cut down on mustard by a tbl. and mixed it in. Instead of brushing olive oil on rolls I brushed on grapeseed/garlic oil - it is excellent.

Antoinette's Strawberry Freeze

This is very, very good. Next time I make this however, I will see how it fits into two 8"x8" so I can keep one in freezer. I wasn't certain if it was to go back into freezer again or not but family liked it better after it thawed completely and strawberries had more flavor than when frozen. Funniest thing was when I came into room and found my teenage daughter licking very last remains out of the dish. She was embarrassed but we almost rolled on the floor laughing.

Green Chili Stew

I really enjoy good stew and this is a fantastic alternative for variety. This is so good because the ingredients are nicely balanced. I like spicy foods but I think too much would spoil the already robust flavor. I take it as part of the characteristic of this stew that it is thinner brothed than most people might anticipate but I personally would not change it.

Potato Salmon Patties

I rate this 5 stars but I won't be making them again. I took my first bite and said "ummmm honey, what do you think"? After 21 years of marriage and a kazillion meals later my husband says he really doesn't care much for salmon. Who woulda thought? My mom and several friends declared they are absolutely five star and will gladly take them off my hands any time I see fit to make them again. Should I make them again for myself (and mom/friends) I think I would add just a little minced bell pepper.

Broccoli Tomato Salad

Absolutely will make this salad again. The dressing is outstanding - gourmet dining at home. I seriously considered foregoing rest of the meal and eating only salad but wouldn't you know, everyone else wanted some too.

Wild Rice Casserole I

This is a good side dish. As another reviewer said, it makes alot so would be excellent for large family, potluck or when having guests for supper. If your family doesn't mind having the same side dish two days in a row make it with servings as given otherwise, cut recipe in half. I agree that sliced water chestnuts would be a nice addition if you like texture variety. I think I will keep several boxes of the instant rice mix handy in my pantry now. Almost forgot, it did take a bit longer for the rice to cook completely than recipe said so you might want to test out cooking time in your slowcooker before serving it for a specifically timed dinner.

Cranberry Walnut Slaw

High rating well deserved and is an excellent alternative when you're in the mood for something diiferent than or in addition to your favoeite cream slaw. I halved the recipe and the ingredients still seemed to be pleasantly balanced for perfect flavor. I prepared this yesterday to go with Christmas Dinner menu. With the variety of dishes prepared for a large holiday dinner this slaw did not get the attention it deserves. I am going to make it again for our New Year supper and add it to my "quick and delicious - it's a keeper" list. Thanks for a freat recipe.

Drunk Dogs

Everyone enjoyed "Drunk Dogs". I agree that 1/4 cup of whiskey is better than recipe amount given. As suggested I used Jack Daniels. I tried to find little brats (my husband is a cheesehead from Wisc) but not in any stores around my home so got two pkgs of Little Smokies. Only put 1-lb in the slow cooker. Next time will do 2-lbs at outset as there is indeed enough sauce and people won't be disappointed when they go back for more and the Smokies are all gone. I've prepared other similar recipes for potlucks but didn't really care for them personally. That's why I was looking for something better when I found this one. I have to admit it, I was one of those disappointed when I went to get a few more and they were gone. But then, these are so easy to prepare I can toss everything in the slow cooker for myself anytime I want.

Amy's Cilantro Cream Sauce

I gave this a 4 rating only because I think the cilantro is overwhelming. I wonder if there is a difference in the size of a "bunch" in different produce sections. I really like cilantro but it was way too strong for most of our guests tastes. I will definitely work on adjusting the amount of cilantro because I can see that this is has the basic potential of excellence when adapted to individual preferrences.

Absolutely the Best Nacho Dip Ever

hmmmm....not certain what I did wrong but this didn't turn out for me. Maybe I'n not the best nacho dip maker and I deserve the 2 stars rather than the recipe. Even though the salsa didn't appear watery, I strained it - so..I may have removed needed moisture out of the saucy part of the salsa. I halved the recipe but I think if I do that again, I'll use the entire sc/cc mixture called for in the primary recipe because it was pretty skimpy when layered at the bottom of the bowl. I liked the idea of cucumber so after I spread the finely cut lettuce on top, I diced the cucumber and spread a ring of it on top of the lettuce around the edge of the bowl and sprinkled black olives on top of the lettuce in the middle. Most of the chips broke off when we tried to dip them including those shaped like a scoop. I'll probably tinker around with this a little and see if I can get myself up to at least 3 stars.

Spinach Deviled Eggs

These were okay. Family thought a tad too sweet, which could easily be corrected but they didn't like the added texture with the spinach and like their bacon in strips next to breakdast eggs. My daughter was still fondly recalling the deviled eggs I made at Thanksgiving which I created and didn't write down. Guess I'll need to see if I can recall what I did. I think these were nice for a change but family majority rules so probably will not make again.

Tequila Cocktail Sauce

Terrific stuff. I only halved the recipe and still had lots. I could make 1/4 the amount next time but I think our friends would be disappointed. They exclaimed all evening about how much of that wonderful cocktail sauce there was. No one refused my offer to put some in a jar to take along when they left. I am surprised at the tasty boost tequila gives the sauce. It is thinner than what we expect a coctail sauce to be but the flavor helped my husband adjust to that. Will definetly make this again.

Split Pea Soup Atu

If I rated this soup on flavor alone it would get 5 stars +, but...I cut the water by half and it was too thin. Though I was dismayed with the watery consistency, I was delighted with the overall blending of the ingredients flavors. I used a meaty ham bone from New Years dinner, added celery and carrots. For hot sauce I used Cholula because the heat doesn't dominate the wonderful flavor of this hot sauce. I simmered the soup for a couple hours then put it in fridge overnight. Next day I cooked it down until right consistency for us. I didn't puree part of the soup which is probably a step that does help to thicken it. We enjoy the less smooth texture of split pea soup but I may try the puree thing next time. This soup is so good that there will be next times. It's well worth the little effort to correct the consistency to our likings.

Chocolate Lovers' Favorite Cake

I'm really of two minds with this cake. I prepared recipe as given. I used my electric hand mixer and everything blended beautifully. As per other reviewers, I let it cool in pan for about 30 minutes. It slid right out - no problem. Great chocolate taste and I didn't think it screamed box cake at all. It's the texture that threw me. It was definitely completely baked and looked perfect but - and maybe this is what other reviewers termed moist - it was wet. My cake wasn't goohey or heavy like a brownie it was what I can only term as wet. Since many people have rated it so highly, I would say try it. My husband and friends enjoyed it so I don't at all consider it a waste of time but unless someone asks me to make it again, I probably won't.
