Easy Pumpkin Cream Trifle

I made this dessert for Thanksgiving this year and not only was it delicious, but makes for a gorgeous presentation layered in a trifle bowl. I made it exactly as written and it was perfect. It gets better and better the longer it is refridgerated. Everyone loved this dessert!

Baked Sweet Potatoes with Raisins and Pecans

I made this dish for Thanksgiving dinner this year instead of my usual sweet potato casserole and really enjoyed it so much more. I was growing tired of my sweet potato dish tasting more like a dessert, and really just wanted to enjoy the sweet potatoes by themselves without all the fluff. This recipe was exactly what I was looking for. It is sweet enough, but you are able to appreciate the sweet potatoes for what they are. It does only take 3 large sweet potatoes to cover bottom of dish in a single layer. I cut the potatoes in half rounds instead of cubes, as I think it makes for a nicer presentation. I sprinkled a little bit of cinnamon over the potatoes b/f adding liquid. I also used pure maple syrup, which I think is key. Incredibly easy and delicious.

Balsamic Roasted Red Potatoes

I thought these were delicious pretty much as is, except I put 1T salt. They had plenty of flavor for me, without too strong of a vinegar taste. I did drizzle the balsamic right out of the bottle over the potatoes, estimating the amount. Didn't feel good about dumping 1/4 cup over them even with tossing. Excellent side dish.

Kalamata Olive, Tomato, and Cheese Melt

This is one of our favorite recipes we have found on this site. I omit the jalapeno peppers, use a mexican blend cheese instead of the cheddar and add diced chicken. I toss everything together in a lasagna pan and bake it. The red wine and kalamata olives really make this recipe delicious.

Banana Nut Bread III

This banana nut bread was moist and delicious. I increased the amount of banana to 1 3/4 cup(about 5 sm/med bananas)and added 1/2 tsp.cinnamon, and 1/4 tsp.nutmeg and used one loaf pan. I tented with foil after loaf had lightly browned and baked a total of 60 min. Thanks for the great recipe!

Cabbage Rolls II

I'm not sure where some folks went wrong on this recipe, but it turned out just fine for me. I cooked the onion w/the ground beef and added minced garlic. I would recommend decreasing the amount of pepper and doubling the sauce. The next time I make this I think I will make some extra sauce to spoon over the rolls when reheating. It really is delicious. Thanks for sharing!

Easy Devonshire Cream

This whipped cream is exactly what I was looking for to pipe around the edges of a pina colada cheesecake I make. I added another T. of sugar and 1/2 tsp. of vanilla extract and it was delicious! Thanks so much for sharing.

Bella's Rosemary Red Potatoes

We enjoyed these potatoes, but I would tend to agree with some of the other viewers that they could use a little less oil and butter. I also crisped them up a bit under the broiler before serving.May try 3T olive oil and add some minced garlic next time. Thanks for the recipe!

Cranberry Waldorf

I'm so sorry to say I was very disappointed with this recipe. I made it for Christmas dinner at my huband's familie's house and was so displeased with it that I almost didn't take it. My husband talked me into taking it and only two people ate it, my husband and one other person! Nobody even commented. I thought the presentation was very unappealing as well as the taste.

Blueberry Buckle

This recipe was fair, but I think with some of the others suggestions, it's worth trying again. Forgot to read other reviews before making this and will make some changes next time around. This cake was somewhat dry,even crumbly. Will reduce flour,use butter instead of shortening and add crumb topping mid way through baking so it doesn't get so crunchy next time.

Hot Artichoke and Spinach Dip II

Enjoyed this appetizer very much. Very quick and easy to put together. Topped with shredded parmesan instead of mozz. Parm. doesn't get hard as the dish cools. Served this with baked pita chips brushed with olive oil, garlic salt and parmesan. May try marinated artichokes next time for bolder flavor. Thanks for the great recipe!

Chicken and Cheese Stuffed Jumbo Shells

This was incredible!My husband said this was his favorite. I did make a few changes based on other's opinions. Hopefully this will be of some help: I used 8 chicken tenders, boiled and seasoned with garlic salt and italian seasoning. Chopped these in the mini-food processor. Sauteed minced onion and garlic in olive oil and added 3/4C of italian bread crumbs with salt and italian seasoning. Mixed beaten egg, 15oz ricotta cheese,1/2C mozz and 1/4C grated parmesan,stuffing mixture and chopped chicken. Stuff shells,pour 1C spaghetti sauce on bottom of dish,then place shells in dish,next top with more sauce(32oz total)then top with mozz and grated parmesan. They melted in your mouth! Beware, this dish takes about 2hrs to prepare start to finish, but it's well worth it. Thanks Echo!

Pan Seared Salmon I

Love the combination of salmon with capers and lemon, and yes this dish was very easy, but I had some trouble with the outside of the fish browning too quickly with the high heat, and the inside not being quite done enough. Could you use a high temp. to sear it for 2-3 min. then lower the heat to cook through? I loved the taste, so I will experiment with a different temp.the next time I make it.

Ginger Glazed Chicken with Pineapple Salsa

This chicken had a great flavor. I marinated the chicken longer than intended,overnight and then through the next day, and it was great. My only complaint was that I felt like the pineapple salsa called for too much cilantro. I used a couple of tablespoons and that was plenty, as it has such a strong taste. Served this with a caribbean rice mix and it was a great tropical flavored dish.

Glazed Meatloaf I

This meatloaf was delicious.My husband who has an aversion to meatloaf loved it. I made a few changes based on the comments of others: Substituted 1C bread crumbs for bread,used 2tsp.of bouillon granules instead of 1, added 1/2tsp.salt,1/4tsp.pepper, doubled the sauce. Very flavorful.Thanks Delia for sharing this great recipe!

Down Home Macaroni and Cheese
