Baked Oatmeal II

I have made this twice. The first time I used 1/2 of the brown sugar and the second time I used the full amount. I think the full amount of sugar is too sweet. I also substituted apple sauce for the butter and used a butter flavor extract to cut down on the fat. I will half the amount of cinnamon from now on too, it is a little overpowering. I used golden raisins instead of the cranberries and added chopped walnuts and chopped apple. Delicous. The raisins add enough sweetness, so you don't miss the sugar if you cut back on that. I love this recipe because it sticks to your ribs and carries you through almost until lunchtime. It also so versatile,. You can add whatever sounds good to you that week. I would highly recommend it.

Lemon Chicken Piccata

I followed this recipe to the letter, with the exception of pounding out the chicken before cutting into medallions. 3 chicken breasts yielded 6 medallions. I liked the idea of this dish. It reminded me of something you would get at a nice restaurant, but I would make a few small changes. I would decrease the amount of butter you put in at the end. 3 tablespoons was way too much and it left a greasy feel in your mouth. I would just do a small pat of butter at the end. My family found this dish to be way too tart also, so I will decrease the amount of lemon juice by half next time and see how that tastes. Otherwise the chicken was nice and tender, golden brown and it made for a very nice presentation. Will make again.

Jill's Hash Brown Casserole

I baked this casserole for 45 minutes according to the instructions, but the hashbrowns (used frozen as directed) were not fully cooked and a little crunchy, so after dinner I put it back in the oven for another 30 minutes and that took care of it. I thought this recipe was a little bland and could have used a little salt. We did not care for the cornflakes on top because we found them to be chewy after they were cooked. I would try an alternative topping, like bread crumbs or ritz crackers mixed with a little butter. Speaking of butter, I think you could easily half the amount of butter and it would be better and less greasy. I probably wouldn't make this again if my husband hadn't loved it so much. I will make the changes above and try it again since he seemed to really like the idea of this casserole.

Apple Cinnamon White Cake

This was a nice coffee type cake. Could have been more moist, It was a little dry and crumbly. I have another apple cake recipe that calls for oil instead of butter and I may try that the next time. I topped with a buttermilk glaze after it came out of the oven and was still in the pan. In my opinion this made the cake. This cake was still raw in the center at 40 minutes, so per other reviews I baked for 60 minutes. Its a nice cake, not overly sweet. I would like to tweak this recipe a little on the next attempt before I decide if it's a keeper.

Sopapilla Cheesecake Pie

I am giving this 4 stars because I modified it the second time I made it to cut down on the sweetness. I cut the sugar in the topping to 1/4 cup, 1/4 cup of butter, 1/4 cup of honey. This was plenty enough for the topping and the dessert was still very sweet and rich. Still a little too sweet for our tastes, so the next time I think I will cut the sugar in the cream cheese mixture in half and I think it will be perfect. We love this dessert. Just took to a potluck and got alot of compliments. Thanks for submitting this recipe OP. :) *I think this dessert is better when it is chilled overnight.

Asian Beef with Snow Peas

My family and I enjoyed this dish. I used zucchini and mushrooms for my choice of vegetables. I used a splash of sesame oil with the vegetable oil and garlic infused rice vinegar. I doubled the sauce per other's recommendations and doubled the cornstarch so my sauce would thicken quickly. Everyone had second helpings so it must have been a hit. ;)

Apple Cider Sauce and Pork Loin Chops

Loved the sauce for these chops! I thickened it slightly with a little cornstarch. I would makes sure you reduce it enough to concentrate the flavors. I used bone in chops so they would be more tender and moist. I baked these chops 20 mins based on the other reviews. I removed them from the sauce and covered them with aluminum foil allowed them to rest while I made the sauce. Served with cinnamon apples, mashed potatoes. I think I would really like to try this with a pork tenderloin next time and make the sauce on the side. It would be amazing. You'd have the tenderness of the tenderloin with these delicious flavors. It's a keeper for me, thanks!

Great Pumpkin Dessert

Very good! Have made it twice and the second time I used a can of pumpkin pie filling that already has the sugar and spices and it was just as good if not better. Just omit the sugar and spices.

Cookie Balls

This is one of my husband's favorites, so I tried this recipe. They were delicious! I formed the balls and refrigerated before dipping and here's a tip: If the Vanilla Almond bark is too thick when melted, you can add a little Crisco to thin to your liking. Turned out great.

Candied Carrots

These carrots were good. I would recommend cooking down the sauce a little bit so that it thickens up a bit. Reducing the sauce made a nice glaze that was more flavorful and coated the carrots nicely.

These bars were really good! My only suggestion would be to decrease the amount of cinnamon sugar on top to at least half. There was just too much and it made them too sweet. Otherwise, a very nice fall treat. :)

Spicy Garlic Lime Chicken

You can trust to leave this recipe as is, which is rare! It's delicious. It's so nice to have a go to recipe that calls for everything you already have in your spice rack. The only thing I have to usually buy is the limes.

Chicken Enchiladas I

I modified this recipe based on some of the reviews and my family and I loved it. I poached chicken tenders and shredded. Sauteed onion in olive oil and added chicken to skillet. I omitted the oregano, since it is an italian spice and didn't seem to fit. Reduced amount of pepper, used 3/4 jar of our favorite salsa ( On the Border) in place of the tomato sauce and omitted the green pepper. I omitted the water and cooked down the chicken mixture to prevent any "soup-like" consistency as mentioned in other reviews. Filling was perfect! I spread some of the taco sauce in the bottom of the dish, then added the enchilada's, topped etc. We gobbled these up...so good! Definitely adding to our dinner rotation. TY, OP.

Sweet Pork for Burritos

Amazing! The only thing I changed was I only used 1 cup of brown sugar and didn't puree the salsa, otherwise followed the recipe exactly. We used for soft tacos. My family loved it. So easy and delicious. We will definitely be adding this to our dinner rotation. Thank you OP!

Delicious Ham and Potato Soup

This was a nice soup. It had a little too much chicken flavor for my taste using the granules and tasted more like cream of chicken soup with potatoes, than potato soup. Next time I will either half those or use chicken broth. I halved the salt and pepper. The pepper was fine, but it was still too salty with the granules and ham. Hopefully cutting back on the granules next time will fix that. Will definitely make again and tweak to our liking. For a double batch I used 1/2tsp pepper

Yummy Sweet Potato Casserole

This casserole was delicious. I baked 4 large sweet potatoes at 375 degrees for 1 1/2hrs. Slipped right out of the skins. Mixed this by hand bc I like the little lumps and didn't want it totally smooth. Thought the amount of sugar was perfect, not too sweet. My husband and I both agreed it did not taste like a dessert compared to others we've had in the past. Used canned evap milk. Doubled the vanilla and added some cinnamon. Baked at 350 degrees with another small casserole and that was fine, but did have to leave in a few extra minutes to get the topping done. Thank you OP! Loved it!

Tricia's Pineapple Cheese Casserole

I have always enjoyed this dish when people have brought it to potlucks, so I decided to make it for Thanksgiving this year. Really enjoyed it. My one mistake was I added the crushed pineapple with the tidbits based on other reviews and apparently didn't get it drained enough so there was juice in the bottom of the casserole dish and that's not attractive, so drain your pineapple well! Next time I will omit the crushed, its tradtionally made with just the tidbits. I was hesitant to add all of that flour/sugar mixture bc there was so much, but it truly does dissolve. I used a whole sleeve of Ritz crackers. Yummy... thanks OP!
