Grilled Peanut Chicken
This dish turned out better than I expected. I did not have a grill so I used the frying pan instead. Although it was hard not to burn the peanut sauce like other reviewers said, it did not burn the chicken fortunately. I did use thin cuts of chicken to reduce the searing time. I also doubled the sauce so to reserve some when serving and I was generous with the cayenne pepper to my liking. The lime juice really popped out and complimented the overall sauce. My husband loved it. I followed the advice of another reviewer and served this chicken with the Sesame Noodles recipe by scoopnana. It was just perfect!

Sesame Noodles
Wow, this dish turned out better than I thought. The layers of ingredients really mixed well in taste. I did not have safflower oil on hand nor did I have chili paste. Instead, I used one tablespoon of chili oil (I thought this would have made up for the two). I also used thin whole wheat spaghetti and it was just as good. Delish!

Chicken, Asparagus, and Mushroom Skillet
The flavors of this dish were subtle but good. The only complaint I have was that after I melted the butter with olive oil and threw in the chicken, the skillet got filled with a lot of liquid for some reason (the chicken I threw in was not wet. Maybe I overcrowded it in the skillet?) Therefore, the dish got watery and I think maybe that's why the flavors got watered down which I didn't mind anyway. I was just hoping it would thicken somehow and turn into a nice sauce for presentation. Oh yea, the mushrooms tasted really good so next time I would double the amount.
