Penne Pasta with Veggies
I changed this up a bit. I used the swirl pasta since that's what I had, boiled in water with a dash of salt till cooked and set aside. I used asparagus, red bell pepper, zucchini, crooked neck squash and white onion. I sauteed with very little olive oil and added salt and pepper. I put this aside and cut up the chicken into large bite size pieces and cooked in the same pan i sauteed the veggies in, I added some sun dried tomatoes and about 2 large tablespoons of sun dried tomato pesto and salt and pepper and also added some red pepper flakes. Once the chicken was cooked I combined everything and served. I added a little fresh parmesan on top. My husband loved it! I will make it again.
