Chicken with Quinoa and Veggies

Really flavorful and easy. This is a good recipe for using up what you have in the refrig. I would say that the essential ingredients are the basil, feta and quinoa. You can add what ever vegetables you like; sun dried tomatoes would be good if you don't have fresh. I added some wine from my glass when the veg and chicken mixture seemed a bit dry. Used one can of broth to cook the quinoa and it was perfect at 12 minutes. Will definitely make this again.

Tasty Lentil Tacos

We loved this recipe. So good and so easy. You can really control the level of spiciness or heat by how much and what type of taco seasoning you add. I plan on using these lentils as a substitute for ground beef in many recipes. Would be fantastic in taco salad!

Baked Tortilla Chips

This was a pleasant surprise. So easy and so good! Didn't use the lime juice; just brushed with olive oil and followed the rest of the recipe as written. Served with homemade guacamole and lentil tacos (another fantastic AR recipe). Thank you!

Crab and Swiss Quiche

I would call this one of my tried and true recipes. Have made it several times and never use a crust. The most recent time I used pepper jack cheese instead of swiss. Also added some granulated garlic, 1/4 tsp Old Bay, and a pinch of cayenne pepper. This boosted the flavor and it was GREAT! I always add something to give a bit of green color - either chopped spinach or sauteed kale - whatever I have on hand, 1/4 cup or so. Served with salad and crusty bread, it makes a great meal.

Quinoa and Black Bean Bliss

Doesn't get much easier than this! Very tasty and healthy. I used jarred salsa and cut the amount to about 12 oz. I also added fresh cilantro. It tasted a tad salty, but that could be remedied by using the fresh salsa. Thanks for sharing the recipe.

Baked Scallops

Great tasting and easy recipe, but can easily become too salty. I recommend using unsalted butter, especially if you are using Old Bay seasoning which contains salt. Panko bread crumbs are good. For the smaller bay scallops, 20 minutes may be too long. Fresh chopped parsley and a drizzle of fresh lemon juice after it comes out of the oven really brightens up the flavor.

Bake Sale Lemon Bars

I think this recipe is great just as written. I do 1 1/2x all the ingredients and bake in a 10x15" insulated pan. A no fail recipe and they always disappear fast.

Chocolate Chip Cookie Ice Cream Cake

My son, who loves Dairy Queen Ice Cream Cake, said that this was better! Used Oreo cookies, vanilla ice cream for the bottom layer and cookies & cream ice cream for the top layer. The Oreos were rather 'big' around the edge, but it worked out OK and tasted great. Lots of possibilities by varying the ice cream and cookie types.

Zesty Slow Cooker Chicken Barbecue

I was pleasantly surprised by this recipe. Very good taste and couldn't be much easier. It made lots of sauce so I will cut back on that the next time I make this. Used thawed chicken drumsticks and they were done easily in 4 hours on high.

Italian Kale

This was a super recipe! If you are a novice at cooking kale, like I was a while ago, you need to strip the leaves off the stems and also chop the leaves a bit before cooking. You should add a small amount of water when cooking the kale and watch carefully so it doesn't boil away and burn. This recipe is very easy and has a really nice flavor. Thank you so much!

Breakfast Burritos

Thanks for the recipe! This is great for my teenage son to grab before school so he can have some protein for breakfast rather than just a bowl of cereal. I, like the previous reviewer, also found that the reheating is better if you take the burrito out of the freezer the night before and it will thaw in the refrigerator. I usually add some taco sauce to the inside before heating.

Egg and Cheese Puffs

These were Okay. Reduced the cheese and butter in an attempt to cut some fat. The taste was good but they did stick on the bottom. Probably will not make again. If I am going to eat this much fat, I'd rather eat cheesecake.

These are very tasty and moist. Both my husband and teenage son said they were great. Follow the recipe and you can't go wrong. I would suggest chopping the apples more finely than coarsely.

This recipe has it all. Great taste, low fat, easy to prepare, ingredients most cooks would have on hand, and colorful in appearance. You could easily substitute other vegetables. Thanks for a great recipe!

Scandinavian Almond Bars

These are my favorite cookies to make for a reception or similar event. They are easy to make, taste great and look very pretty on a tray of cookies. The glaze dresses them up and makes them attractive, but the taste is fine without the glaze. They also freeze well (they don't stick together).

These are simple cinnamon sugar cookies but they are fantastic! The flavor and texture are wonderful. Don't bake more than 8 minues unless you want them more crisp than chewy. They won't look done at 8 minutes, but take them out of the oven anyway!

Greek Chicken

So good and so easy. I used boneless skinless chicken breasts and cooked them on my George Foreman grill. They only take about 4-5 minutes, depending on the thickness of your chicken pieces. I would add a pinch of salt to marinade. Very tender, juicy and flavorful.
