Spinach Enchiladas Verde

I was really worried how this would turn out - hardly any ingredients - but bang - what a combination! Super easy to make, my daughter has made it for lunch 3 times in a row since we tried it for the first time for dinner. Suggestion - layer the tortillas vs. rolling them - might be easier.

Chicken with Red Chile Sauce and Sausage (Pollo con Salsa Rojo y Chorizo)

Excellent - thanks to the other reviewers for some tips. I toasted the chiles on a cast iron skillet. I then separately chopped them up in a food processor before adding them to the blender. Chorizo? I really couldn't detect where it added a lot of flavor - not sure if I would add it the next time - or maybe add in more Might be good with a tomato salad on the side next time. Excellent flavor - not too difficult to make. Will be having again!

Mojo Roast Chicken (Pollo Asado)

Excellent- I have found my favorite spanish style bbq chicken - what is not to like? Great on the grill - I haven't put it in the oven and not sure if I will. I don't recommend any changes to the recipe.

Easy Chicken Fajita Soup

I really liked this. Honestly, I was tempted to eat it before I added the broth. The name is really fitting. Excellent exactly as written. I just used taco seasoning that I had. Thanks for the recipe.

Bryan's Sweet and Hot Tomato Pasta Sauce

I won't repeat a lot - except to say that the kids and wife loved this. I kept the sugar at 1/4 cup, and probably over did it on the crushed chiles..... we will be having this again. Thanks for the recipe!

Wine and Dijon Marinated Pork Loin

Excellent - as another reviewer said, consider cutting the salt. The next time we make this, we won't add any salt because the buillon cube had enough salt in it. My kids loved this and they are fairly picky. Great blending of flavors. We will make this again.

Jenn's Out Of This World Spaghetti and Meatballs

I was looking for a recipe (long lost after my wife threw out a cookbook) that simulated my favorite meatball recipe. I used ground turkey, omitted the eggs (accidentally) and made some minor modifications to the sauce. I was afraid to add 3 can's of paste so I just used 2 - increasing the meatballs by 50%. I should have added red wine but didn't. Thank you for the recipe. With just some minor additional mods, I can make it like I used to.

Spicy Hot Chicken Legs

OK.... maybe the last 30 min in the oven did wonders (I didn't do this). It's about what I expected out of a crock pot. I don't think it's anything special. I probably will try it again though.

Taqueria Style Tacos - Carne Asada

Great! I have to agree with the other reviewers. If you want to save time, use store bought salsa. Use skirt steak (tenderized) instead of flank. Grilling it is the only way to go -(I finished it off on a skillet though). Meat has to be marinated for a while - 1 hour is too short. I recommend at least 8 hours. Cilantro, onion, the corn tortillas, and the cajeta cheese is a perfect combination with this! Muy bueno!

Great taste. We cooked the filling 1st. I recommend it. I really don't see any reason to handle/risk the raw filling. I also think doubling/tripling the eggs helps (if you are pre-cooking it)

Chinese Noodle Chicken

this tastes like moo goo gai pan. It was quick to assemble and was flavorful. I would make it again. Update - I definitely would cook the noodles - it has been a long time since we made it last - but I think that is a key missing step (11/2009)

Cincinnati Skyline Chili

Good! I followed one reviewers suggestions and didn't brown the meat. It was fine and eliminated a step. I think it was a tad bit dry. Not sure quite how to fix it. Its been a few years since I have had the real thing so not sure how to compare, but I will say that it is good enough to have again!

Carne Con Chilies

Pretty good. I don't think it was necessary to pre-cook the sauce. It came out fine straight from the food processor to the pan. I loved how quick this dish was. That's a plus. I didn't put in all the jalepeno's either... that would have been too hot. Overall pretty good! Thanks for the receipe.

Authentic Louisiana Red Beans and Rice

This was good. I did it in the crock pot, and added a ham hock and some ancho chiles for some spice. I didn't eat the rice or add the sausage. Except for needing some salt, this was a really good flavor and hit the spot!
