Aw-some Cole Slaw

Super easy, super yummy. Shredded the cabbage on our meat slicer, threw in the other ingredients and it was ready in less than 15 minutes. We let it sit up for only a couple of hours and it was delicious! Hubby says it's better than what he has had in most restaurants (and he is a world traveler). I truly agree.

Breaded SPAM® Steaks

This is such a simple comfort food recipe. Ready in less than ten minutes. Everyone loves it. The egg flavor comes through and reminds me of Loco-Moco. Always a great thing! Hubby ate his with Dijon, I had mine just hot out of the fryer.

Basic Buttermilk Corn Bread

This is an excellent corn bread recipe! It is classic southern style and very easy to make. The only change I made was to add in a dash of salt. I will definitely be making this many times in the future.

Grilled Beets in Rosemary Vinegar

I'm giving this five stars because I loved the marinade and the beets were really good once grilled. The only mistake we made was to grill them a bit too long and they became "chewy". Perhaps next time I will do as others have done and boil a bit and grill a little.

Slow-Cooker Pepper Steak

This is an excellent recipe. I didn't change a thing. It was super easy to prepare and what more can a busy mom/wife want than to throw all of the ingredients in a slow-cooker and have an amazing meal after work and chores? Everyone loved it. Hubby (household master of grilling/smoking) said it is now one of his most favorite recipes. Yay!

Mexican Hot Carrots

This is a great recipe! It's super simple and delicious. I've made it several times and haven't changed a thing. Hubby is from San Diego and loves his authentic Mexican food. He says this is a close as it gets to what he grew up eating.

Elnora's Peach Cobbler

I love this recipe! It is almost identical to what my mom made when I was a kid. It's super easy, and turns out perfectly every time. Like others, I used a smaller dish (9x9) because we like a thicker cobbler. I also added a pinch of nutmeg. No other changes were made. The crispy edges around the crust and soft gooey center chocked full of peaches makes this a great hit with family, friends, and everyone!

Tomato and Avocado Salad

I'm a big fan of balsamic vinegar so this was for me. Only changes we made were to add a dash of salt, a bit of sliced white onion and sliced cucumber. Quick "salad" with healthy, yummy ingredients. Definitely will be using this recipe often.

Chicken Pot Pie

I had slowed cooked a chicken the previous day and used 2.5 cups of it. It seemed a bit dry as I was mixing the veggies with the gravy, so I added half of can of milk and it turned out perfectly. Also, I sauteed onions in butter then mixed this with the veggies before adding them in the pie. It was eaten up quite rapidly by the whole family.

Broiled Tilapia Parmesan

Japanese Chicken Wings

WOW! These are delicious! I doubled the sauce recipe since I had about 5-6 lbs of wings. Hubby asked for these and they were gobbled down in no time flat. Even my son who normally doesn't eat wings loved them. Other than doubling the sauce recipe, I didn't change a thing...and wouldn't!! These will definitely be made many more times in the future.

Golden Potato Soup

Excellent recipe! The only changes I made were to use fresh parsley instead of dry, and I added a bit more water than required. However, because I did, I found it to be too thin. I won't make this mistake again. My advice, make the recipe just like it is and you will love it!

Like many others, I reduced the amount of sugar to 1/2 cup. Also, I omitted the powdered sugar on top. It was very good and the family loved it.

They turned out a bit too dense for my family, but the flavor was great so they were eaten. I believe next time I will drop them by spoonfuls and cook at a lower heat for a bit longer time.
