Roasted Beets 'n' Sweets

Wonderful! I went with the fresh garlic (just left whole, baked during the final 15min to avoid burning), also left the beets longer to bake, as other Reviewers, I found the beets needed more than 15min's head-start. I didn't do the bag mix, either. Just dashed the salt & pepper all over, having put the oil in the pan and stirred the veggies pre-cooking to ensure they were properly covered. Also, I skipped the sugar. The sweet potatoes were sweet enough as they were. So good. Can't wait to make again!!

Pico de Tuna

Excellent recipe - full of flavour, healthy & easy to make. Like another reviewer, I wrapped the tuna mix in large pieces of lettuce. I also sauteed the onion & garlic for 4min, added 4 thin slices of jalapeno with seeds & pith and ended with ground coriander, not having any fresh leaf coriander/cilantro on hand. Delicious. Next time I will try keeping it raw tho just to try the recipe as originally posted. Thanks so much!

Fire Roasted Vegetarian Gumbo

Wonderful, full flavour. I skipped the file powder, like some of the other reviewers I didn't have any on hand. I love spice & was skeptical of the instruction to toss the seeds of the hot peppers - perhaps in part because I only had 2 banana peppers & 1 jalapeno. I'm glad I kept them because when I opened the can of fire roasted tomatoes they didn't have any heat at all. Not sure if this is the norm. - anyway, I added the seeds when the tomatoes went in. I also added a teaspoon of crushed chili flakes. Thank you so much for this recipe!! I've never made gumbo before and although it can be a bit work-intensive, I will definitely use this recipe again!

Baked Dijon Salmon

Lovely! Unfortunately I realized a bit late I didn't have any honey so I upped the Dijon mustard so the spread with (1.5 tsp of) margerine would cover the fillet. Only reason I didn't give 5 stars is I didn't try it with all the ingredients - the concept is excellent however, and I'll try it with the honey next time. Soooo good!

Pasta and Herbs

Keep it simple - wonderful concept. I did use 3 tbsp olive oil w/ 3 tbsp margerine to make it healthier. I also didn't have marjoram, savory or black olives and added 1 tsp of oregano. Also added a few chopped muchrooms & some broccoli flowers, grated. Was lovely. I will use this again, and try out different combinations. Thank you!
