Sweet 'n' Hot Glazed Salmon

Thumbs Up, tastebud tantelizing an simple!! Used apricot preserves/apple jelly, omitted dried apricots, nectar and honey. Also added a few shakes of red pepper flakes. Fresh garlic and fresh ginger essential. Baked 375 for 15-20 min., then broiled 3 min. for more browning. Moist and so flavorful!

Gourmet Sweet Potato Classic

Best new recipe I've tried . A real keeper! I microwaved the cubed potatoes, then mashed and whipped the potato layer. Turned out so light and fluffy, and held a warm temperature all the way through our meal. A very attractive presentation. Sweet enough to serve as a dessert as well as a side dish. Like others, I will try decreasing the sugar next time.

Ginger Glazed Mahi Mahi

Easy and very flavorful. Just personal preference, I used 2 cloves garlic and decreased the vinegar by half. Also added toasted sesame seeds and a few snips of cilantro at the end of cooking. Superb with a nice presentation.

Double Tomato Bruschetta

A six star recipe. This is good year round. To simplify, I did as others and used 2 cans of well drained petite diced tomatoes. Also used 4 cloves of garlic, omitted the mozzarella, and spread goat cheese on the toast before adding the topping to broil. The balsamic vinegar and the fresh basil are essential.

Acapulco Chicken

Quick and easy. High Flavor. Made the recipe as written but sprinkled both fajita seasoning and chili powder on the chicken, sauteed two cloves of minced garlic with the meat, blended in 1/2 cup of fresh pico de gallo and extra cilantro with the remaining ingredients. A very satisfying meal!!

Kiki's Borracho (Drunken) Beans

Delicious!! Had no beer, but was still great without it. I fixed this the day after Christmas and added a leftover ham bone. The red and green from the tomatoes and fresh cilantro gave this dish a festive look. Don't cut back on the garlic. Six cloves seems extreme but this dish can handle it.

Mendocino Chicken Salad

I made this recently for a big lunch at work and it went over great with everyone. I used 13 oz cans white meat chicken to further simplify the recipe and added garlic salt, otherwise followed the recipe as printed. For this event,I wrapped sandwiches ahead of time with leaf lettuce and used croissants. The consistency of the chicken works well on sandwiches or served over lettuce. So easy to make! A keeper!!

Oat Bran Muffins

Simple and healthy, not overloaded with refined ingredients and fat. I sprinkled a coat of cinnamon and fresh ground sea salt over the top of the muffins before baking for extra flavor. A keeper. Thanks Bron!

Capers and Halibut

A simple, elegant and divine dish, good for anything from a quick casual meal to very impressive presentation for company. I added some fresh diced tomato from the garden, but the recipe is perfect as originally presented. A definate keeper! Thanks for a great recipe Barbara!

Zesty Marinated Asparagus

Fast, easy and colorful addition to summer meals. I served this with grilled leg of lamb and roasted red potatoes with rosemary. Followed the recipe exactly, but also added some diced red pepper and white onion sauteed in olive oil for extra color. The lemon adds a nice flavorful touch. Yum!!
