Curried Coconut Chicken
Pleased with the results, especially as it is a easy recipe. Used red pepper flakes for a little extra kick, used sea salt, as well as fresh tomatoes. Added a little extra curry and followed previous comment regarding cooking curry in oil a little longer than directions state. Also cooked over medium without cover after 20 minutes, since it would take a lot longer otherwise. Left on for 30-35 min more and thickened nicely. Good recipe, will probably repeat.
