Pumpkin Fluff Dip

I've made this a couple times now. This time I used about 4 oz. Cool Whip, and I used the no fat kind. I also used sugar-free vanilla pudding. I sprinkled the top with cinnamon and served it with vanilla wafer cookies.

Healthy Banana Cookies

I think you could add some carob chips to make them sweeter, but I like them. I'll try them with applesauce next time to make them even lower in calories. Also, a prior reviewer mentioned that you should turn them at about 7 minutes: this is good advice. If you don't, they'll burn.

Creamy Yogurt Hummus

I like this: (1) like another reviewer said, it's more tangy than usual and (2) it's easy to make. But I think it doesn't hurt to add a little cumin and ground red pepper. I made a double batch.

Fava Bean Breakfast Spread

I understand this is supposed to be for breakfast, but I made it for dinner. I liked it a lot and so did my dinner company. We stuffed it into pita. Next time I'll add a little more lemon juice. This might be good with some eggplant too.

Tofu Hummus

The tofu makes this hummus creamier than usual, but I think you may want to doll it up a bit with more spice--some cumin perhaps.

Artichoke Hummus

Corn Yeast Rolls

I made this into a 9 x 5 loaf, baking for about 50 minutes. I used about 1 c. whole wheat flour and 1.5 c. bread flour. Made this way, this bread is particularly good with peanut butter.

Banana Nut Bread I

I used only 2 c. of sugar instead of 2.5, and it was plenty. You could use even less. Also, I think this bread is a tad greasy as is. You can add another banana, and it turns out fine.

Bread Machine Cardamom Bread

I made 12 rolls and baked them for 22 minutes in a 350 oven. I could have taken them out at 20 minutes. They got a bit too brown. These were crusty on the outside, which is good, but I thought they could use a little bit more salt.

I skipped the sunflower seeds and added more raisins. I think you could use less sugar in this, maybe just 1/2 c. But it's very good as is and it freezes well.

Oatmeal Dinner Rolls

I made this in a 9 x 5 pan instead of making dinner rolls. I baked it at 375 for about 33 minutes. I used half whole wheat flour, 2 T. of gluten, and 2 T. of dry milk powder. I think the bread should have more salt, maybe 1 t.

Sweet Honey French Bread

I made this in a 9 x 5 pan, but I think it would have worked better in an 8 x 4 pan. In any case, the crust is chewy and the flavor is slightly sweet. I loved it.

Brownie Bread

I didn't make this in a bread machine, but it rose nicely in a 9 x 5 pan. I added about 1/8 c. extra sugar and 2 T. gluten. I didn't think that it was sweet enough or really very chocolately, but I think if I want that sort of thing, I should make a quick bread. My husband loved this bread though. He said it was great toasted with peanut butter or honey. To each his/her own...

Milk Bread

Dark Carrot Raisin Muffins

I really like these because you can make them very healthy. I used only 1/4 c. raisins and added extra carrot. I made sure to squeeze the water out of the carrots too.

I added 2 T. gluten and 2 T. dry milk powder (for sweetness). I also added twice as much cardamom as the recipe asks for because I really wanted to be able to taste it. This recipe isn't difficult to make and looks lovely when it's done.

Oatmeal Bread I

I got 3 9x5 loaves and one mini loaf. The bread is light and fluffy and tastes really good. This would make a good sandwich bread. It's pretty easy to make too; you just have to plan ahead a bit.
