Risotto with Asparagus

Very good! I sauteed asparagus and some sliced mushrooms in the saucepan (separately and then set them aside) and used extra white wine to deglaze before starting the rice. I think this really infused a lot of great flavor. I thought I would end up needing more broth when I was almost out at 20 minutes the rice was still not fully cooked but I it turned out perfectly (took almost 30 min. total). And of course...I had to add garlic! Huge thumbs up from the boyfriend- will definitely make again.

Cilantro Serrano Cream Sauce

Very good on grilled fish tacos! To make it lighter I used light mayo, light sour cream, and a little milk. Peppers added a great kick! Would make a great salad dressing too. Will definitely be using this recipe again- thanks!

Anna's Chocolate Chip Cookies

I was disappointed in this recipe. I have had many better chocolate chip cookies. I followed the recipe exactly and the cookies turned out very dry, hardened quickly (weren't very chewy the next day), and were not even that flavorful. Guess I have to keep on looking for the perfect recipe!

Banana Bread V

I just finished baking this bread a few minutes ago. It is still warm but I have tried a slice and it is very very good. I might have put a little more banana in it because I like a strong banana flavor but other than that it turned out great. I did follow the suggestions of adding vanilla and cinammon and using 1/3 cup brown sugar along with 2/3 white. I had to purchase those aluminum baking tins at the store after discovering I had lost my loaf pan and they were a little smaller than 9 x 5 so my batch made two loaves. It took about 45 minutes at 350 (the last ten minutes I lowered the temp to 325 because the top was nice and brown and the middle needed a bit more time) and they are PERFECT. All in all a great recipe!! Thanks!

Delicious Peanut Butter Cookies

I just made these cookies last night and they are almost gone already. I followed one reviewer's suggestion of substituting the 1 1/4 cup brown sugar for 1 cup brown sugar, 1/3 cup white sugar and then used a full cup of peanut butter and real butter instead of shortening. I also baked the cookies at 350 like most people suggested for about 10 minutes. I only made about 12 cookies from the batch (I like them pretty big) and I flattened the balls of dough out and pressed them with a fork before I baked them. They are undoubtedly the best PB cookies I've ever had. I'm making another batch tonight to share with my family! Follow the substitutions and I GUARANTEE you won't be disappointed!!
