I love this bread! I'm not sure if I'm doing something wrong, but I cannot get that white fluffy store bought bread, but on the other hand, I really like this MUCH better. it's slightly sweet with a light chewiness, and fresh out of the oven I could eat a whole loaf! I've made this a few times, first following the recipe exactly and came out with a sweet-bread consistency, pretty dense and very buttery and sweet. I cut down the sugar to 1/2c for my second batch and had basically the same results, only having a slightly fluffier bread. Again I cut down the sugar (desperate for that "sandwich loaf") to 1/4c, and finally had a great loaf of bread. My husband and I ate an entire loaf within an hour out of the oven! It was still slightly sweet but definitely the best bread EVER.
KITCHENAID USERS: proof your yeast in the mixing bowl, then add your salt & oil. on speed 2, begin to add your flour 1/2-1c at a time. once you add about half and begin to get a ball on your hook, decrease to stir each time you add flour and only add 1/2c at a time (my mixer tossed flour everywhere at 1c on speed 2!) Once your happy with the consistency (i found this closer to 5c instead of the recipes 6c, mix on speed 2 for another 3-4 minutes, remove from your hook and HAND KNEAD for another minute or two. It gives the bread that hand kneaded love and helped me shape it out for a nice pretty loaf in the pan.
Hands down, this is a great loaf of bread! Definitely a keeper!
