Grandma's Polish Perogies

Yum! I stuffed half of these with a mixture of mashed potatoes, cheddar cheese, fried onions, garlic and bacon, and the other half with fried mushrooms and sauerkraut (something a Polish friend of mine introduced me to). Both worked out very well, although one or two fell apart during cooking (make sure to pinch the seams closed very tightly). I would also add that the time in the recipe doesn't account for freezing time. I wanted to freeze mine thoroughly before cooking, and I had to keep them on greased cookie sheets in the freezer overnight. Very time consuming, but absolutely worth the effort!

Fruit Muffins

Good, basic muffin recipe. I made two batches, one with peaches and blueberries and another with coconut, strawberries and cherries. In my eagerness to stuff these muffins with fruit, though, I added more than a cup and made the batter a little too runny--the muffins were stuck to the pan, despite greasing it ahead of time. Other than that, delicious recipe! I will definitely make this again, with wholewheat flour--and make sure to fill the muffin pans to the very top as my first two batches didn't rise very much.

Fluffy Pancakes

Very good and just as quick as prepackaged pancake mix. I made one batch with blueberries, and another with cinnamon and nutmeg mixed into the batter. The first batch seemed a bit thicker than I was used to, so I added a couple tablespoons of water. Still a light, fluffy texture, but a thinner pancake, so cooking time changed. Again, very good! Thank you for sharing!

Best Ever Muffins

Fantastic muffin recipe that acts as the perfect base for all sorts of flavor combinations. I made a double batch (which made ten massive, over-sized muffins). I divided the batter and added strawberry and rhubarb chunks to one third, sharp cheddar and apple sauce to another, and blueberries, almonds and cinnamon to the third. Cooking time definitely varies depending on how much stuff you've added (denser batter). Keep a close eye on these muffins and you'll be totally rewarded! Thanks for sharing!
