Sugar Cookie Icing

A very sweet icing but it has a lovely finish. As others have said, you have to adjust the milk and corn syrup to get the right thickness.

Eggnog Pancakes

These are great, but as other reviewers have said, you need to add a lot of milk until batter is the right consistency. Clarified butter does protect them from burning; since it takes a while for thick pancakes to cook it is worth the extra step. For a Christmas holiday brunch, offer warmed mincemeat (diluted with apple juice) as a topping.

Great fall flavour! Serve it with vanilla ice-cream. As others suggested, tossing the sugar mixture with the pears makes for better distribution.

Classic Rice Pilaf

Great way to make rice for a crowd! I doubled the recipe, added 5 minutes to the cooking time and another five to the out-of-oven steaming and it was perfect. Reviewers who doubt the ratio of rice to liquid must be thinking of the typical stovetop preparation, which is a different method (-with some of that liquid evaporating during cooking as steam escapes the pot.). Also, melted butter/oil make up some of the "liquid" in pilaf. In short, trust the recipe - it delivers!

Amazing White Clam Sauce

Very tasty! I cut the garlic and olive oil in half, and added 1/2 cup white wine with the clam juice. Cut cream down to 1 1/2 cups if you like - there's plenty of sauce for 6 servings.

Family liked it, but I agree with another reviewer: the sauce is WAY too thick! I cut down the cornstarch to 1.5 tbsp., increased chicken broth to 1.5 cups. Good served over rice noodles.

Beer Brats

I've always liked bratwurst in beer and these were fine BUT the onions were very bitter and everyone left them on the sides of their plates. Maybe they weren't "necessary", but I expected to serve them as a nice accompaniment; instead they were unappealing. I agree with other reviewers that they could have been carmelized to improve flavour, but in the end, I'll just use a more reliable and crowd-pleasing recipe.
