Marinated Mushrooms

I LOVED these mushrooms! I didn't have any red wine on hand so I used a cup of beef broth. They were fantastic! I will try these again and next time use the red wine and add a little more garlic!

Peppermint Brittle

I love this recipe but I had to work with it a few times to make it pretty. I found it easier to melt the chocolate on the stove top in a small double boiler. I only melted one pound of chocolate at a time. I crushed 4 regular size candy canes and mixed them in the cocolate and then spread it on a cookie sheet lined with wax paper. It works best if it is spread thin, not too thick. Then I had one candy cane crushed to a fine powder that I sprinkled on top while it was still warm, this made them shimmer and look so much more appealing. Then I chilled it in the fridge for about 30 minutes before breaking it up!

Creamy Peanut Butter Fudge

I made this for a cookie exchange. I followed the directions exactly and it never "set up" for me, not even after 6 hours in the refrigerator. After an hour in the freeze I was able to cut it into squares that melted within the hour. It was a smooth, creamy blob and I was so embarrassed at my cookie party. I gave it two stars only because I thought it tasted really good if it would have been the right consistency. Very disappointing!!!!

Irish Chicken and Dumplings

I just had to reiterate what everyone has already said, this dish was amazing. I had a huge dilemma when my husband asked me to make chicken and dumplings for him. I have memories of this dish from when I was a kid and my Mom made it. I remember it being the grossest, most bland, boring, mushy meal ever and usually would go without dinner whenever she made it. Well, this is not my Mom's chicken and dumplings nor does it look like it. This was delicious! I even ate the dumplings! It was so creamy and flavorful! I was really impressed, I will be making this dish for my family for many years to come. My picky 11 year old and my 2 year old ate it all up and even went for seconds. My husband was in dumpling heaven and told me that I would have to make this one again. Thanks for a great recipe!

Chicken Enchilada Soup II

This soup was FANTASTIC!! To make it a little more hearty I jazzed it up with a can of corn, a can of black beans, and a can of rotel. I also baked thinly sliced strips of corn tortillas and used those for a topping along with some shredded cheese a dollop of sour cream and some cilantro to garnish. It tasted just like it was made from a restuarant. The whole family loved it! I will definately be keeping this recipe, thank you so much for sharing it!!!

Oven Baked Jambalaya

This was great, my husband loved it. It took a little longer to cook. Next time I will cut down on the rice and cook it separately to add to individual bowls. With the rice cooked in, it was not good as leftovers, the rice soaked up all the juices. Otherwise it was great.
