Peanut Butter Marshmallow Squares

Substituted 1/4 cup coconut oil and 1/4 cup margarine for butter. Added rice krispies instead of nuts and coconut. Turned out very tasty.

Sugar Cookies with Buttercream Frosting

Love these. I refrigerate them for a day in an airtight bag before baking that way you're not tempted to rush the cooling process. They roll well on a slightly floured counter and if you use parchment paper to line your cookie sheets, no cooking spray or oil is needed on the pan. I haven't made the icing yet as I like to use the ones you can write with from the store for more intricate designs.

Applesauce Oatie Cookies

Love these. Made them 3 times and the only change was I doubled the cinnamon. Absolutely delicious and a great "oatmeal to go" for the whole family.

Out of this World Turkey Brine

Used this recipe twice for chicken. The first time, I let the bird soak for 4 hours (for a chicken, a large ziplock freezer bag is a perfect fit and allows for full brine coverage). That bird was tasty enough we had a second the same week. For the second bird, I soaked it in the brine for 24 hours and it was incredible! I added potatoes cut in halves and sliced carrots under the roast as it baked. what a fabulous meal! I agree with previous posts, you must rinse the bird well after brining (don't worry, if you soaked it long enough, the bird has all the flavour it needs).

Fluffy Pancakes

Amazing. This is our go to recipe for pancakes and has been for 2 years. The vinegar sounds weird but it's purpose is to create buttermilk and it reacts with the soda to give you the telltale fluffiness. You can use soy milk instead and actually we found it tastes even better.

Tartar Sauce I

Simple recipe. We found it missed something so I added 1 teaspoon of cream of tartar and blended the mixture in the magic bullet. Deliciousz

Broccoli Soup

I too omitted the nutmeg (just not a fan) and added dried onion to the fresh and extra pepper. Absolutely delcious soup, healthy and satisfying. My 3 year old loves it too. Making my second batch tonight!
