Happy Hippy Stuffing

I had someone making a corn casserole -- so a corn bread stuffing was out. I have someone who hates sausage -- so a sausage stuffing was out. Oh yeah and I've got two big macho guys who would hate something called Happy Hippy Stuffing. And . . . it got compliments out the wazoo. It was perfect blend of flavors and worked great. I thought for sure there was far too much bread but it was perfect and feeds oodles.

Upside Down Pumpkin Cake

Delicious! We had some people who didn't love pumpkin and they thought this was great. It did gel up nicely and though it looked kind of awkward on top, it was great as soon as you delve in. As for changes, I added some dried cranberries between the pumpkin layer and the cake mix layer. I used a sugar/stevia blend and things worked out just fine!

Libby's® Pumpkin Cranberry Bread

I used whole wheat flour and seemed to have some problems with it being solid by the reported cooking time. However, when I took it to work everyone was thrilled and gobbled it right up!

London Broil II

Let me put it like this. The boy comes home and says "I'm not really hungry, but I'll try a few bites." Then he proceeds to eat his whole portion AND gives me two compliments. TWO!! It's a winner as far as I'm concerned.

California Halibut Bake

VERY easy, with ingredients you likely have around the house already, this was a big hit. The creamy part wasn't overbearing at all and got thumbs up from all three men I was serving! Will definitely make again. In fact, I already did. My boyfriend liked it so much, we made more for his lunch this coming week because there was none leftover after dinner!

King Cake

This was my first I'd ever made! It was hard to get the pieces wide enough for the filling without it oozing out, BUT was delicious nonetheless! I got lots of compliments and the filling was great. I did use my own frosting though -- great cake! Someone even told me it was better than one they'd had that was store bought.

Clam Sauce with Linguine

Mine got sticky so I think some olive oil would have been a good addition, but we did enjoy it and would make it again. I'm not sure how it would have been with canned clams, but we used razor clams we'd harvested/dug ourselves and it was yummy.

Salmon Rosemary Burgers

The boyfriend approves, I approve, we're good! Good flavor, easy to make, they didn't crumble apart. I just cooked them on the stove top since it is cold out here in Alaska! I've made salmon burgers before, but I think I would use THIS recipe again instead of the one I'd used before!

Delicious Feta-Crusted Salmon

Spaghetti Squash Primavera

Well, I'll be honest, it's definitely not like pasta -- but I didn't expect it to be. I tried this recipe for the health benefits of having a low-carb dinner. And with that being my expectation it was pretty good. I found that the feta was really the only thing that had flavor and I enjoyed it -- though I'm not sure how I'd change it to give it a more robust flavor.

Crab and Swiss Quiche

VERY GOOD! Unique and delicious (even for someone who doesn't caren't for swiss cheese normally!). I have made this twice - once for myself and then the second time for a couple who had a premature baby in the hospital and our church group was feeding twice a week. I know I took a risk taking a quiche (with seafood no less) for the couple, but they LOVED it. Both times I used REAL crab and that's honestly the way to go. I have lived in Alaska for awhile now and am lucky enough to get it. The couple I made the 2nd quiche for is from the east coast and so while the crab varieties are different than what they grew up with, they also adored this recipe. Definitely a keeper!

Gnocchi in Fontina Sauce

It was rich, but we couldn't quit eating it. It made a LOT of sauce for just the gnocchi called for, but it was delicious. We added halibut to ours for some "meat" in the dish to make it more of a main dish than an entree.

Shrimp and Crab Enchiladas

Um, YUMMY! Living in Alaska we were so excited to use our crab meat. My boyfriend is fond of Tex-Mex and well, it was a hit! We made it just as listed and it was good! Would make again -- but leaving out the green enchilada sauce -- just wasn't our favorite!
