Fluffy Pancakes

WOW! I really prepared myself to be disappointed again, but these pancakes are STELLAR!! Oh, WOW!! There were NONE left. I don't need to go to my favorite pancake place anymore. I made them exactly as written but doubled the recipe. If I could give this more stars, I would. Just excellent!

Sweet Restaurant Slaw

Incredible! My kids love slaw. No matter where it comes from, they will eat it. I was a cashier at the chicken place when I was in high school and the cashiers were responsible for making the slaw, among other things. 50 pounds of cabbage plus a ratio of onions and carrots that I have since forgotten. Just a few of the outside leaves. Not too many though because that would make it more bitter. But the dark green leaves was to make it look pretty. LOL After the cabbage, slaw and onions went through the machine with the huge rotating blade. After all had gone through, we poured in a gallon (or two) of the dressing that was purchased already premade. I did like I knew and chopped the cabbage and onions by hand and sent the carrot through my salad shooter (cabbage is too wet to survive in the size that I want) and it took me back many years. And then . . . THIS dressing looked exactly like the dressing I remember. And after I poured it into the cabbage mixture, I KNEW I had that slaw from long ago. Now theirs is dry and this is the moist slaw that I remember. INCREDIBLE!! My 6yo told me that if it tasted like the Captain fish's place, he was going to eat it all up and ask for more and more and more. When he tasted it, he told me that it WAS better than that. He got seconds and thirds. My 11yo daughter kept getting spoonfuls. And the 4yo gobbled his up. They couldn't get enough.

Mini Pumpkin Butterscotch Muffins

EXCELLENT! I don't like pumpkin flavored anything, but I wanted to give this a try with all the reviews. So glad I did. Next time I have to do morning snacks at church, I will be taking this along. I already have a slam dunk snack from allrecipes - Mandarin Orange Bites - that everyone salivated over. Now I have another. These are so very good. WOW!! I was NOT expecting such flavor depth.

Chicken Pot Pie IX

This is an excellent pot pie. The only change I made, which isn't really a change is that I added salt to the water when I boiled the chicken and vegetables and used that for the chicken broth called for later in the recipe. That way I controlled the salt without using canned/boxed/bouillon broth.

Kae's Turkey Pot Pie

This is for the crust only. The shortening taste is overpowering. I don't normally make crusts with shortening - always use butter, but I thought what the heck. I had just made 2 pie crusts with shortening (different recipe) for pecan pies just 4 days earlier with the same shortening I used for the crust to this pot pie. I normally use another pie crust recipe but decided to give this one a shot since the other ones came out so well without the butter. I won't be making this crust ever again.

Chocolate Syrup

This was an excellent recipe. However, my syrup never began to thicken. I probably should have combined the cocoa powder and sugar together first prior to placing it in water. So, I added a tiny bit of water to 1.5 tablespoons of cornstarch to dissolve the cornstarch and poured it in. Let it boil lightly for about a minute and then removed it from the heat and added the vanilla. Perfect consistency.

Mandarin Orange Breakfast Bites

Absolutely delicious. And easy. Big hit with my daughter who HATES almond extract. She didn't even know it was in there. Excellent. I bought canned mandarin oranges because I had a coupon. Now I will be buying them to make this quick and easy recipe. I used a food processor to crumb the butter into the dry ingredients and then poured that mixture into the wet ingredients. It was definitely pourable and not stiff. Thanks for a great recipe.

Blonde Brownies I

I finally did this recipe correctly. One small step caused it to always fall - sifting the flour. It made a world of difference between the last batch and this one. This is by far the best I've made. Great with homemade vanilla ice cream.

I originally saw this recipe in Quick Cooking magazine years ago. It quickly became a staple at our house. It is absolutely delicious! Forgot to add that I don't use saltines for this recipe. Buttery crackers make the dish.

Creamy Vanilla Ice Cream

Superb!! My kids loved it and said it was better than store-bought and I only buy Breyers and Edy's. Only my husband didn't care for it; he thought it tasted like whipped cream - it wasn't sweet enough for him. -Update: Even though I rated this 5 stars, I still came up with small pieces of egg white no matter how slow I heated it. So I did what I knew to do and that was to warm the milk to a light simmer and combine the eggs, sugar and salt separately and temper the egg mixture. This time it was perfect. No little pieces of egg yolk.

Green Grape Salad

I haven't made this but had it at my son's baby shower. It was a mixture of green and red grapes, halved and the brown sugar and pecans were simply sprinkled on top. It was an absolutely delicious dessert.

Yeast Pancakes

I'm an excellent cook. This is probably the worst thing that I've ever made. I had high hopes for it but it definitely tasted like homemade bread. That was not the taste I was going for. Bread with syrup. My 20 month old will eat anything with syrup on it. Gobbles it down and asks for more. He barely finished this because he's not a big bread fan. Thumbs down on this recipe. I'm going to try another. My husband tried to save the batter and turn it into a french toast pancake with cinnamon and sugar and that tasted a lot better.

Spiced Pot Roast

Buttermilk Syrup

Brown Sugar Meatloaf

I made this meatloaf again last night with a few revisions. I had no eggs so since I use ground turkey anyway, I decided to try it out since ground turkey binds together better than ground beef. Excellent!! I cut the sugar down to 1/3 cup and used 2 slices of honey-wheat bread instead of the cracker crumbs. It actually held together better than it ever had when I made it previously. I will definitely be making it again without the eggs - very low in cholesterol after that change.

Vicki's Hush Puppies

First time I've successfully made hush puppies. This was delicious. Thick like I thought it should be and no need for milk whatsoever. I can't imagine adding milk to it. Wonderful. Even my 7yo ate them and she NEVER eats hush puppies. It probably helped that it was sweet, but she gobbled them up.

Cornmeal Coating

Wow. I've never successfully fried fish and I hate coatings that call for egg as I'm never sure whether the egg will chemically change enough not to affect me since I have a slight intolerance. This is a perfect blend of spices and an easy coating. I used it on whiting and it was absolutely delicious. Definitely will be using it again.

Old Fashioned Peach Cobbler

This is absolutely great. I've always been a double crust cobbler girl, but it's hard to find that. I've never made a cobbler before although I consider myself an excellent cook and baker. I was skeptical about the orange juice and fully intended to follow the crust recipe and combine it with another peach filling recipe. I'm so glad I didn't. This was absolutely great!!! I kept raving about it. My husband loved it too. I will be making this again and again. I did substitute the shortening for butter. I don't stock shortening. And I didn't use two sticks. It was more like 1 1/2 sticks for the cobbler. Baking the bottom crust first made this the perfect cobbler. I'll be using this crust for all future cobblers. I'm making blueberry next (after I make the peach again). Thanks for a great cobbler. I didn't do the lattice top either. I just cut 1 1/2 inch long strips and placed over the top of the peaches. I just couldn't see myself doing a lattice top.
