Lime Chicken Soft Tacos

Delicious! The directions are kind of terrible (20 minutes to sauteé chicken cubes?) but if you use common sense you can figure out the right way to put the ingredients together. I cooked the chicken just until no longer pink then added the other ingredients. I cooked it down for about 6 minutes more, stirring regularly. Delicious! Much more delicate flavor than "taco seasoning" will give you. It allows you to really have veggies and condiments accentuate the flavors instead of competing against them.

Alfredo Sauce

Quick, easy, delicious! I didn't have any parsley and I added a little black pepper because that's how hubby and I like our alfredo. Even before I added the pepper, though, the sauce was delicious! I made sure to stir it often while it cooked to get all the clumps out. It got a bit too thick for my liking so I added a little milk to thin it out. Served over fettuccine noodles with grilled chicken and steamed broccoli. Delish!

Absolute Best Pancake Syrup

A few days ago, I rated this a 3. I'm amending my rating now that I've figured out the cooking time a bit better. The ingredients together are AMAZING and I give them 5 stars. But the cooking time? 0 stars. After you've put together everything but the baking soda, let it cook on medium-high heat until syrupy (about 10 minutes). Then follow the rest of the instructions.

Amish White Bread

This was the first bread recipe I've made by hand (I've used a bread machine a couple times with mediocre results). Oh my goodness! So good! Light, moist and delicious. I want to eat the whole loaf. I'll be making this recipe again and again.

Chicken and Potato Soup

As is, I don't think this soup would have nearly enough flavor for my taste. I made some substitutions that made it turn out AWESOME, although more of a stew than a soup. First, after I added the onion I also added about a tablespoon of minced garlic. I did not add water, I added chicken broth. And since I had it in my fridge and it needed to be used, I added some heavy cream. I wanted a stew-y consistency so I mixed some corn starch with the cream to thicken the soup up. Finally, I added just a little rosemary. The rosemary threw me over the moon.

Buttermilk Pancakes II

So flippin' good! I've never made pancakes from scratch before and these just blew mix out of the water. I fried them in butter instead of oil just because that's my preference. I served them with the cinnamon syrup that you can find on this site. Delicious and fluffy! Will definitely make again. My husband gobbled them up!

The Best Turkey Chili

I never made chili before this but man oh man is it ever good! I made it with turkey the first time, beef the second. The third time I made it with both chunks of beef and ground beef. So delicious! Tastes awesome with a little cheddar cheese on top and some garlic toast on the side.

Chicken with Quinoa and Veggies

This recipe was the first time I tried quinoa or cooking with feta cheese. I didn't have garlic scapes so I just used a couple cloves of minced garlic. Very tasty! I didn't like the texture of the quinoa but the taste was good. The chicken and veggie mixture also tastes amazing with mashed potatoes. I imagine rice or pasta would also make great sides. I will definitely make this again.

Elaine's Peanut Butter Cookies

Meh. It was okay, but I'd prefer even store-bought cookies to these. They were easy to make but not even really worth the effort. I'll stick with from-scratch cookies from now on.

Orzo with Parmesan and Basil

Pretty good! A bit too much basil for my taste, but definitely a good recipe. I think next time I make it, I'll reduce the amount of basil and add a couple cloves of minced garlic. This seems like a recipe you can play with a lot and get really good results.

Sloppy Joe Sandwiches

LOVE! This is a recipe I will make again and again. I added a couple ingredients just for my personal taste (onion, garlic and a splash of vinegar) but even written as is this is a great recipe. I tried it both with and without pepperjack cheese. Both ways are pretty awesome. I love this recipe so much that I plan on making it again tomorrow!

Broccoli Hamburger Casserole

GREAT with a couple of suggestions. My husband and I like a little spice, so I added about 2 tsp of cayenne pepper. I also added 2 tbs minced garlic. I put half the meat/soup/etc mixture in the baking dish, topped with half the cheese, topped with remaining meat mixture and the rest of the cheese. Served over mashed potatoes. I think next time I'll put mashed potatoes on top before the last half of the cheese. The starch really goes well with all the rest.

Chicken and Peppers with Balsamic Vinegar

DELICIOUS! The 4 stars is only because the cooking time is a bit off. The veggies need minimal precooking since you're going to cook them with the chicken and vinegar for 20 minutes anyway. I ended up cooking the chicken full-through, setting aside, cooking the veggies to tenderness, adding all the rest of the ingredients and chicken to them and cooking about 10 minutes until the chicken was heated through. Next time, I'm going to try grilling the chicken and veggies in order to cut some calories. Overall, a wonderful dish that has given me reason to love vinegar!

Oatmeal Crispies I

These are REALLY delicious, but I'm giving them 4 stars based on the instructions being a bit vague. "Shape into long rolls"? How long? How big should they be? How many rolls? I didn't know, so I just guessed. I guessed wrong and just made one 2 1/2' long log, so I ended up with bigger, chewier cookies. DELICIOUS, but not crispy. Next time, I would definitely divide the dough into two 2.5' logs and I imagine it'll go better. Also, be sure to place the cookies 2-3" apart or they'll stick together. But really, even messing up the size of the cookies... it doesn't matter that much. You still end up with a delicious, SUPER easy to make cookie. I used pecans instead of walnuts since it's what I had on hand, and I chopped them very finely so they blended in with the cookies instead of standing out.

Mini Meatloaves

One of my favorite and most-used recipes! As is, it's really good and I give it 4 stars, but I normally make a few changes to send it over the edge to 5. First up, I add a small onion, diced finely. Then I add 4 or 5 strips of cooked and crumbled bacon. With these two additions, this recipe is out of this world.

Salsa Chicken Burrito Filling

While this recipe is a good starting point, a few alterations bring it through the roof. Skil the extra chili powder and add a little bit of oregano. Chili powder is usually a mixture of cayenne, oregano, garlic, cumin and salt. Taco seasoning tends to have many of these ingredients already, so to add more is a bit redundant and likely to make your dish too salty. I also added about 1/3 c chopped onion, 1/3 c diced tomato and 1/2 can of black beans. The kind of salsa wasn't specified, so I went with Pace Chunky. With these changes, it made THE best taco filling I've ever had. Basically, experiment! Try adding the kinds of things you normally associate with tacos, adjust the seasonings if you like things a little different.

Garlic Cheddar Chicken

LOVE this recipe. So yummy! I like to add a little more cheese to the mix but otherwise I really enjoy this recipe. I've probably made it half a dozen times in the last several months. I recommend finely shredding the cheddar.

Baked Teriyaki Chicken

I'm pretty unimpressed with this recipe. For me, there was too much cider vinegar; it sort of overwhelmed all the other flavors. Also, the area directly around the chicken on the pan was burned black. Chicken is really moist, but I'm not enjoying the flavor.
