Roasted Loin of Pork with Pan Gravy

I adapted this recipe for use in the pressure cooker. The technique variations I used are as follows. 1. Brown the loin on all sides in cooker 2. Followed steps 2 & 3 exactly 3. Add 1 cup stock and bring cooker to 15psi for 50 minutes. Allow natural release of pressure 4. Followed steps 5 & 6 exactly Taste was excellent! Thanks for posting

Chef John's Irish Pork Stew

This was exceptional! I added a little extra garlic but otherwise made as-is. The wife commented that this was the best stew she has ever had. I am certainly not going to wait for St, Patrick’s day to make again. Chef John’s Irish Stew with Lamb is on the radar too. Going to be tough to top this one though.

Beef Medallions with Caramelized Pan Sauce

Had two beautiful 10oz Omaha Filet Mignon which I cut in half and bashed to about 1/2 inch thickness. Followed the recipes exactly. Could not have been a better New Years Day dinner!

Spinach Stuffed Chicken Breast

A nice change of pace. I used 10oz package spinach, well drained, and high quality pepperjack (sliced and placed on top of spinach spread before rolling). Next time I make this, the only change will be to reduce the oven bake time by about 10 minutes. Plan to still broil to brown the bacon (1pc each extra thick cut)for ~5 min to crisp up slightly. Thanks!

Cabbage Fat-Burning Soup

Used V8 Hot and Spicy for the juice so I omitted the onion soup mix because of the extra sodium. Added a little extra heat with 1tsp cayenne pepper. Also, since this was not primarily for a diet plan, I added 1lb brat links (sliced to 1/2 inch thickness) and 1lb ground turkey. Makes a lot of very tasty soup! Thanks for posting.

"reduces quickly to a thick, rich, sweet-tart apple syrup." NOT! I have made this several times and think it would be fair to say "eventually reduces to a thick, rich sweet-tart apple syrup". Tastes great!

Garlic Mashed Potatoes Secret Recipe

Made 10 pounds for this years Thanksgiving get together with my brother and sister in-law and family. Used 5lb of red and 5lb of gold spuds. I roasted 4 large heads of garlic (tops cut off, olive oil, wrapped in foil, 325 for and hour). Seemed to be the correct amount of garlic to spud ratio for our tastes. Thanks for posting!

Chicken Thigh Fricassee with Mushrooms and Rosemary

Very happy to have found this recipe! I used 8oz of button mushrooms, thickly sliced and well caramelized. Had 4 large leg quarters which I separated the thigh and drum. Held off adding the garlic until after the chicken was well brown. Looking forward to making this often.

Chicken Breasts in Caper Cream Sauce

Loved the flavors! Used the cooking techniques from Chef John's video on AR for "Quick Chicken Piccata". I omitted the lemon pepper. Instead, after deglazing with white wine and smashing a few of the capers, I added the juice of 1/2 lemon into the pan. Added 1 cup of Heavy cream and reduced until I got my desired viscocity. Thanks for posting!

Another good low-carb side. Easy to customize to suite your taste. So far have only been able to try the microwave method since the oven is usually tied up. Looking forward to try the oven method sometime to see if there is any difference in texture, etc...

Chef John's Smothered Pork Chops

Have been making these regularly since I found the recipe in Chef John’s cookbook, “Americas Family Favorites: Best of Home Cooking” in 2011. Through my own tinkering, I now substitute Onion and Garlic powder for the Poultry Seasoning. I allow the chops to come to room temp, and lightly sift and pat in a coating of flour on them prior to frying, shaking off any excess. Follow the balance of instructions exactly. The wife and I enjoy Roasted Garlic Cauliflower from AR as a side. Good Stuff!

Milk Braised Pork Loin

Thanks for a great recipe! I had a boneless pork shoulder which I cubed into 2 inch chunks, trimmed most of the fat, and browned in bacon drippings (of 5 slices of crisped up bacon). Brought the milk to boil, then simmered on low most of the way covered about 1.5 hrs. Then uncovered and reduced until I got the desired consistency. Some of the most tender and flavorful pork ever!
