Slow-Cooked, Texas-Style Beef Brisket

This turned out great. I read reviews before making it and saw some said it was dry and burned. It seems only a few had that issue but it made me take extra precautions. I used a roasting bag made for slow cookers and also used parchment paper under the lid. This was far from dry. It was the most tender, moist and delicious brisket I have ever made. The sauce is wonderful and I did add about 4 TBS of Louisiana Hot Sauce just to kick it up a bit. My husband really liked it and he's not a big BBQ fan. I put my slow cooker out on the patio because I didn't want 25 hours of even a small heat source in my kitchen since our air conditioner runs 24 hours a day this time of year. I'm a displaced Washingtonian living in Texas for the last five years and have eaten a lot of Texas BBQ. I think this is best I've tasted. Thanks for this recipe. Can't wait to send it to my son who is well known for his BBQ.

Simple Savory Quinoa

This is very good. It's my first attempt cooking Quinoa. I served it at room temperature. I'm anxious to try it hot and cold too along with some more variations.

Chicken Breasts with Herb Basting Sauce

This was excellant! Didn't change a thing except as someone else commented, remove foil/lid about 20 minutes before taking out of the oven for a crispier finish. I think this may be the most moist baked chicken I have ever cooked! Thanks for sharing your recipe.

Awesome Broccoli Casserole

Only gave this four stars because I messed up. I mixed most of the stuffing with casserole before I realized it should go on top. I added a bit of liquid and put remaining stuffing where it belonged. I think it turned out well considering. Next time I'll follow directions and am sure I'll give it five stars!

Butternut and Acorn Squash Soup

This was easy and delicious. Will make this a fall and winter regular! I did add a pinch of nutmeg. I especially like how it stays thick and doesn't get watery when reheated.

Banana Oat Bread Pudding

This turned out quite well. I did add two eggs as was suggested in other reviews and 1 tsp. & vanilla and 1 tsp. cinnamon. I'm not a big fan of banana pudding but am tired of throwing away over ripened bananas and thought I'd give this a try. I'm so glad I did. This is delicious. If you like bread pudding and oatmeal you'll love this.

Beer Butt Chicken

Turned out great. Didn't have a throw away pan so used a corningware dish lined with a foil oven bag. I read reviews first before making. Cooked it on a 3 burner gas grill, turned the middle burner off and used indirect heat. I did spray the beer can with olive oil. The chicken was crispy and tender with just the right combination of seasonings and hardly any cleanup. Thanks for sharing your delicious recipe. Can't wait to make this again when we have guests.
