Quick Lemon Dijon Chicken
I'll give this 3 stars because it was certainly quick and easy, but I didn't like the flavors. The Dijon should definitely be reduced, and the "sauce" needs to be thinned out. I'll try it again and add chicken broth as others have suggested and perhaps a little honey to sweeten it.

Mandarin Orange Chicken
This is a great recipe. I didn't measure the hoisin sauce and orange juice exactly, so it may have been slightly sweeter than I would have liked. I also wanted a little spice, so I added maybe a 1/2 teaspoon of Thai red pepper chili paste. It didn't end up making a huge difference. I added more green onions because I love them, but also to add some color at the end. Finally, I didn't want to buy cashews, so I chopped up raw almonds instead. The dish was great served over Texmati white rice.

Slow Cooker Enchiladas
I thought this recipe was really delicious and easy to make. Plus, it really tastes like enchiladas from a restaurant, but without all of the grease. I followed the recipe almost exactly, although I only used about a cup of water because the ground beef I used was pretty juicy (85% lean). I also only used 2 cups of shredded cheese for the mixture, which was plenty. I was pretty generous with the shredded cheese on top, though. It was such a great meal, but watch your portions, as this is a very high calorie, high fat entree. I served it with a spinach salad to feel a bit more healthful!
