Baked Potato

I always insert a metal skewer (or a clean nail) into the middle of the potato and it heats up the potato from the inside as it cooks. This cuts the cooking time down by about 30 percent.

Creamy Rice Pudding

Wow...so easy. Amazing. I was totally skeptical, but it's great. Had leftover rice that worked fine. Heated it up first. Also, looked like 1.5 cups cooked of rice wasn't enough but after it got cooking it was fine. good thing i didn't add more like i wanted to. Fiance loved it too. That's his favorite dessert. Now I can make it any time rather than buy it. Long grain was all we had and it worked fine. So did skim milk. Thanks so much Erica!

Easy Batter Fruit Cobbler

Finally. I've probably tried making a fruit cobbler/crisp about 20 times. I never seemed to get it right. With this recipe, it finally came out right. And it didn't even need whipped cream or ice cream. One of the keys to using frozen fruit was thawing it in microwave, draining the excess water, then measuring the 2 cups. Added a little vanilla extract and cinnamon, but other than that it turned out just like the recipe says. Great recipe. It's in the recipe box from now on.

Bacon and Tomato Cups

This is a great recipe. It's a good idea to spring for the brand name rolls, especially the flakier ones. The cheap ones I bought were a little too doughy but still good. I brought them to a baby shower at work and my Hispanic co-workers all loved them and enjoyed the change from the Mexican dishes we usually eat. Thanks.
