Greek Pizza with Spinach, Feta and Olives

Will make again! Used the Trader Joe's Garlic and Herb pizza crust and baked it first. Also used the suggestion of putting the onions on with the tomatoes and olives layer and I added artichokes. Super yummy and husband was impressed!

Spinach and Pine Nuts

I know I didn't follow the exact recipe but I can only imagine the original's results are just as delicious. I used Garlic Gold brand Meyer Lemon Vinaigrette instead of the oil/garlic and also added grape tomatoes sliced in half when I added the wilted spinach to the skillet with the heated oil. WOW, so easy and so delicious. I served it with toasted baguette slices and brie for a quick meal. This is my new recipe to impress friends and family with.

Balsamic Strawberries

I was looking for a recipe for a fruit sauce for my french toast and I came across this one. So it worked for the toast, I substituted vanilla extract for the balsamic and also didn't have enough strawberries so I used frozen raspberries for half of the fruit. It turned out amazingly yummy. Put it over french toast and sprinkled some powdered sugar over it. Delicious! Can't wait to try it with the balsamic.

Bacon and Potato Soup

I used a little milk and also mashed the potatoes after it had boiled for 10 minutes to make a thicker/creamier soup. I didn't have celery but we still thought it was delicious and would make it again. We like spicy foods, but felt the cayenne pepper wasn't necessary and would either add less or none at all next time.

Rhubarb Crunch

Only gave it 5 stars after following other people's suggestions and it was super delish! I used 6 cups rhubarb and 1/2 cup raspberries and 1 and 1/4 cup white sugar and it was still PLENTY sweet. Also, I only had 1/2 cup butter so I decreased the flour to 1 cup and the topping turned out perfectly yummy. There was still lots of topping compared to fruit, so I wouldn't make it with only 3 cups fruit!

Honey Ginger Carrots

These were great. I didn't have any lemon and they still tasted fantastic - I added extra ginger, but maybe wouldn't add quite as much next time and would use fresh ginger. The sauce turned syrupy and was great.

White Bean Chicken Chili

Excelente! This was LOVED by all and all want the recipe. I made a couple changes - I shredded a rotisserie chicken from the market and used all of the meat, substituted a tablespoon or so of dried cilantro instead of the oregano, used four ears of corn, used 3 cans of beans and pureed two first, used 3 cups of broth, and added 1/4 cup of Mrs. Renfro's green salsa for heat (add to taste). This served about 15. What a hit and easy too, going to make this lots.

Simple White Cake

I made 24 cupcakes with this recipe for a wedding shower. I thought they turned out a little dense - they tasted good but the texture left something to be desired. I glazed these with the white chocolate glaze from the raspberry thumbprint cookie recipe on this site and put a whole strawberry upside down in the center of each and sprinkled with coconut - altogether yummy.

The Whole Jar of Peanut Butter Cookies

Savory Chicken Breasts

My boyfriend and I thought the chicken was moist and tasty. I made it with a wild rice casserole (chicken stock, mushrooms, water chestnuts, onions, garlic) and these two paired perfectly!! The only thing I would do differently next time is season the chicken more and cut down on the bread crumbs as well as mix them with the melted butter before adding it to the dish. Nummy!

Creamy Coconut-Topped Chocolate Cake

I am a coconut FIEND and I loved this cake. I will be making this again soon since I ate almost all of it myself. All I can say is thank goodness it is a light recipe! I added food coloring to the coconut layer to match our home team and brought it to a football get together.
