Grandma's Chicken Noodle Soup

In all my years I had never tried to make homemade chicken noodle soup until I saw this recipe. I followed it exactly, and it was wonderful! I always buy fat-free, low sodium chicken broth, so saltiness was not an issue for me. It freezes well, but I try to remember to let it thaw on its own so the noodles don't get mushy from excessive additional cooking. Love it, love it! Thanks to Corwynn and her grandma!!

Pumpkin Gingerbread

I made this today exactly by the recipe. Since I wanted to give several smaller loaves as gifts, I used 6 mini ceramic loaf pans, filling them with about 1 cup each of mixture, and put the remainder into one regular loaf pan. It took the mini pans about 30 minutes to bake. It is delicious! I'm so glad I found this to add to my Christmas baking file. Thanks, Frosty!

I was visiting my brother and made this for a gathering of our old friends we grew up with. Everyone loved it and begged for another pitcher, which went as quickly as the first. It was awesome and so easy!!

Fresh Tomato Salsa

I had never made salsa before, although I love it. This was so easy, and I am now addicted! Use quality tomatoes. I agree with previous reviewers who said one serano chile pepper is enough. I didn't have fresh cilantro, so I used dried. The first time I didn't have fresh lime juice and used the bottled stuff. Doesn't make any difference: it is still delicious! I make this at least once a week. There is a lot of liquid. I tried draining the tomatoes after I chopped them, and that didn't seem to help. Part of my liquid may be due to the sweet Vidalia onion I used, but this is a minor issue. Try this one; you'll be glad you did. Thanks, Bluebayou!!

Classic Macaroni Salad

This is outstanding, and I'm not a big fan of bell peppers. But the flavors all meld together in this one, and it is a definite keeper. I didn't change a thing, except I did not include the optional grated carrot and I used a sweet Vidalia onion. My brother went back for seconds before I could even get it into the refrigerator! UPDATE: I have now made this recipe more times than I can count, and it always gets rave reviews. I now add the grated carrot. Wonderful, wonderful!!

Black Bean, Corn and Turkey Chili

I made this exactly as written except I reduced the chili powder to a scant 1 T (I don't like it spicy) and I omitted the cumin. It is wonderful and so easy. I have made it twice within the past month, and it freezes beautifully. Thanks for a fantastic, healthy recipe.

Easy Peach Cobbler II

I followed this recipe exactly, and it was so easy and delicious. My husband and I both say this is a keeper! I never would have thought of white bread as part of a cobbler, but it definitely works. I'm going to try it next with fresh peaches or blueberries. Thanks for a great recipe!

Deep Dish Brownies

These looked so simple, I decided to give it a try to take to a neighbor who had just come home from the hospital. They WERE very simple; I mixed the entire thing by hand and only cooked for 30 minutes, as previous reviewers had suggested for a more chewy brownie. I then frosted with a chocolate buttercream frosting. They were very good, and the neighbor loved them! Will definitely make again. Thanks!

Baked Garlic Parmesan Chicken

I prepared this last night for my husband and me. Since I only used 2 chicken breasts, I halved the other ingredients, and that seemed about right. After the chicken had cooked for 30 minutes, I covered my husband's portion with pasta sauce and mozzarella cheese, and cooked about 5 minutes longer, until the cheese melted. My husband loved it, especially since chicken parmesan is a favorite of his. Very easy to prepare, with ingredients most of us have on hand. This one is a keeper! Thanks, Karen.

Oregon Salmon Patties

I made this last night, and it is definitely a keeper. I drained a can of salmon, but I didn't find it necessary to use any of the liquid in the preparation. The final product is very soft with no liquid, but it does firm up with cooking. My husband ate 3 of these by himself, so clearly I will be making this recipe again and again. Thanks, Jonnylen.

Lemon Mushroom Herb Chicken

This one is a real keeper. Simple to prepare, with ingredients most people would have on hand, except for possibly the capers, which I did not have. I followed earlier hints and cut the amount of butter in half, as well as the amount of flour and herbs/seasonings. I still had flour left over. I also added more white wine and lemon juice than the recipe calls for. This was a bit hit at my house, and I will definitely prepare it again and again. Thank you, Valerie.

Baked Salmon II

I thought this was very good, and I would definitely prepare it for myself again. Unfortunately, my husband didn't share my evaluation. He thought the spices masked the flavor of the salmon (which is what I liked about it!). Guess I'll be preparing this only when my husband is out of town, but thanks, Norma, for a really simple, tasty recipe.

Newport Clam Chowder

My husband and I both Loved this recipe! I used 4 cans of clams and 4 bottles of clam juice, plus one can of chicken broth. I also chopped up a couple of stalks of celery and sauted along with the onions. I also added only 2 cups of fat-free half and half. I didn't have fresh dill, so I substituted dried dill, but it was still awesome. Thanks for a wonderful recipe, Dee!!!

Sweet and Sour Meatloaf

My husband liked this but still prefers the meat loaf recipe I've used for years. I, on the other hand,thought this was fabulous! I followed the suggestion to add more minced onion, but the sauce is what makes this so special. I will continue to humor my husband with his preference, but I will definitely make this again for me. Award Winning Soft Chocolate Chip Cookies

This is an update of an earlier review of my favorite chocolate chip cookies recipe. I made these last night, using the full recipe for the first time (usually I halve the recipe.) Unless you have a powerful mixer or want to use a lot of elbow grease, I would recommend using only half the recipe at a time. The full recipe makes a lot of dough, and it gets thick. Also, I only had 3 eggs, and the recipe calls for 4. I added 4T of milk to make up for the liquid in the missing egg, and I found no difference in the quality of the final product. It is still an awesome cookie!

Banana Pudding IV

I loved this recipe. I used Neufchatel cheese, fat-free condensed milk and whipped topping, and low-fat vanilla wafers. I also put this into a slightly smaller sized dish and made 2 layers, rather than one. My family polished the whole thing off in 2 days. It is delicious and a fast and easy dish appropriate for company, as well as family. Thanks, Patricia, for a real winner!

Chicken With Mushrooms

I really and truly wanted to LOVE this recipe, after reading all the wonderful comments about it. I tried it with all the suggested changes, i.e.,sauteing the mushrooms with onion and garlic beforehand; adding seasoning to the chicken; adding the cheese the last 5-10 minutes; and adding a can of cream of chicken/mushroom soup to the chicken broth. The result was it was just okay. I definitely would not go out of my way to prepare this again. Sorry.
