Creamy Butternut Squash Casserole

Easy way to get the squash cubes...just microwave the whole squash for 5 minutes (depending on size). Great recipe, I used evaporated non fat milk, reggiano parmegiano and lemon juice for the tang. I'll definitely do this again with a pork roast.

Romanian Apple Cake

This was my best baking effort ever!! The cake is delicious, moist has great flavor and came out of the pan and cut like a dream. I made the whole thing in my food processor and dumped...easy! My hubby has had a piece every time he walks in the kitchen! I followed the recipe exactly but only used two small apples I had on hand and some ripe mango. I tossed flour, pecans and butter together and topped it before baking. Incredibly delicious. I think the reviews that thought the cake wasn't tasty used old cinnamon or not enough vanilla.

Rockin' Roasted Red Pepper Pesto

I've been cooking pasta for my Siciliano hubby for 30 years and was running out of new ideas..I made this pesto over giant elbow macaronis and he raved and had two plates. Thank you so much Peter!

Baked Penne with Italian Sausage

I needed to add oregano, basil, a bit of red pepper flakes and powdered bay leaf. Otherwise it's pretty good. Sort of like my mother-in-law's baked ziti.

Grandmother's Buttermilk Cornbread

Mmmm...the best cornbread I ever made. Perfect density and an excellent excuse to eat lots of butter. I made a mexican version by adding finely chpped hot peppers and cheddar cheese on top. I would have added a photo but it didn't last that long!

Shrimp in Lobster Sauce

I substituted shrimp stock and peanut oil and was still a little shy of flavorville. Second time I used chinese sausage in place of the ground pork and garlic, browned well and the results were very good.

Indonesian Pork Satay

Impressed the heck out of "we love BBQ" friends! I'll make this again for sure. I used thinly sliced pork cutlets and threaded on to metal skewers I oiled first. Worked great. Serve with white coconut rice (jasmine if available) and stir fried carrot sticks.

The Real Chicago Deep Dish Pizza Dough

Amazingly good recipe, very easy and my husband who is from NYC and is a pizza maven loved this crust. I made a 12" round and a deep dish pan pizza and both were crunchy outside, tender inside and stood up to my homemade pizza sauce and toppings.
